Hey, I'm from Switzerland. Y'know... that tiny little country near France, Italy and Germany. It's a country famous for its chocolate and swatches. :)
One of my favorite Swiss-french dishes is melted raclette cheese. In french, the verb "racler" means to scrape. So raclette cheese is scraped off once it's melted. My family enjoys it with cornichon pickles.
I'm sure a lot of you have tried swiss (cheese) fondue, right? Well, branch out a little and try raclette.
Happy Holidays!

How do you make it?
You go out and buy raclette (a little pricey, but worth it) and melt it on a raclette machine/grill.
It looks like this: http://www.amazon.com/T-Fal-7822700-8-Tray-Swiss-Style-Raclette/dp/B0000645Z6/sr=8-3/qid=1166246757/ref=pd_bbs_3/102-1404816-5884924?ie=UTF8&s=home-garden
Or you could melt it in a pot over a fire and scrap it off with a fork and eat it. My family did that once when the electricity went off in our house. That was the best time ever. It somehow just tasted better.
Besides cornichon pickles, it is also good with watermelon rinds. And so you don't get sick of the cheese too easily it's good to eat some potatoes every now and then.
