A saveloy is a vividly red sausage served in English fish and chip shops, also available in parts of Australia, where it is also known colloquially as a sav. It is made of pork and is highly seasoned. The name supposedly comes from the French word cervelas, a pork sausage, sometimes made from pigs' brains. Its taste is similar to frankfurters. It is often eaten in a sandwich accompanied with either pease pudding or stuffing (or both), sometimes known as a saveloy dip. A similar item, available in the United States, is called a Red Hot.

It is similar in taste to a red pudding.

That very much depends on the country. While the English use their own standard sausage, fried or grilled, to make hot dogs, the Spaniards use a boiled frankfurter or saveloy. Not only size and shape are what they differ on, but also what they're made with, mostly are a variety of pork, beef, or both together. Other less common are made with turkey, chicken or veal.

A sausage is a sausage is a sausage. It's pulverised meat with or without herbs and seasoning stuffed into a casing. Doesn't matter if you call it Cumberland, Fred or Saveloy. What's in a name?
