Chanukkah celebrates the oil from the lamp that burned for eight days. The oil that you use to fry the latkes represents that oil and the miracle that occurred. Other foods that involve oil are eaten during Chanukkah, such as sufganiyot, a really delicious version of a holeless jelly doughnut, which is also fried.
Plus, they're just so tasty, why not eat them?

It is traditional to eat fried foods on Chanukkah because of the significance of oil to the holiday. Among Ashkenazic Jews, this usually includes latkes.

It's called tradition.
One of the other answers gave you the origin of this tradition of fried foods for Chanuka (or Hanukkah...not chanucha)..
Besides all this, latkes are delicious!!
