You can do a pasta buffet, make a couple different kinds of pasta and do a red sauce as well as a white sauce. Do some garlic bread sticks and a nice big veggie salad. You could do a nice big bowl of lettuce with various cut up veggies in bowls so everyone could just build their own. If you have meat eaters also, make some meatballs and they can just add them to their sauce.

This lasagna has an awesome flavor and it will work well for veggies and meat lovers alike. Just serve it with a nice garden salad and some Italian or garlic bread. Lasagna's also go over well when serving a large group. Just double the recipe.
Roasted Red Pepper Lasagna
Ingredients
Nonstick cooking spray
2 cups red pasta sauce, such as portobello mushroom or garden vegetable
6 no-boil lasagna noodles
1/2 of a 15-oz.container ricotta cheese
6 oz. goat cheese or shredded mozarella cheese ( 1-1/2 cups)
1 Tbsp. Chianti or other red wine (optional)
1/4 cup finely shredded Parmesan cheese
1 cup roasted red sweet peppers, drained well and cut into strips
Directions
1. Preheat oven to 350 degrees F. Lightly coat a 2-quart square baking dish with cooking spray. Spoon 1/3 cup of the sauce in the dish. Top with 2 lasagna noodles. In a small bowl stir together the ricotta cheese, 1 cup of the goat cheese, and, if desired, the Chianti. Spoon half the mixture over the noodles in the dish. Sprinkle with 2 tablespoons Parmesan. Top with half the red pepper strips. Spoon half the remaining sauce on the pepper layer.
2. Top with 2 more noodles, the remaining ricotta mixture, and remaining peppers. Add 2 more noodles and the remaining sauce. Dot top with remaining goat cheese and sprinkle with remaining Parmesan.
3. Cover with foil. Bake for 50 minutes. Let stand, covered, on a wire rack for 20 minutes before serving. Makes 4 to 6 servings

Do a hot and cold buffet of party food that will also be suitable for veggies. Everybody loves buffet and you can't go wrong with it. You can do dips with fancy bits to dip in and don't forget the pizza slices. Add a festive chocolate log for that something sweet afterwards.

gosh I was going to say Rachel Ray show on TV 12/14 had a great buffet, easy foods for entertaining... but u said u are veggies and this had beef and salmon foods...
I'd pick some of ur favorites to share with work mates, and offer a meat dish for them to nibble on...having a buffet style so ur not in the kitchen all night.

Do a mixture of curries.
Vegetarian and meat ones .
Coconut and fried rice.
Vegtable spring rolls and spare ribs for the meat eaters.
Should go down a storm with a mixture of pickles and poppadums.
Most of it you can prepare in advance and curry gets better with age and just reheat.

Large taco's with and without meat, smorgasbord vegetables with meat like ham, chicken, turkey, fish (small strips on the side) for those that like meat..Pasta is also good as mentioned by another person..I would go for something different that they don't really have all the time and somewhat of a novelty..You use the words mates so I assume you are in the UK..Big thick portions of white fish broiled with onions, various bell peppers and lemon wedges, french fries, a veggie on the side like spinach, broccoli..easy to make, easy to clean up..Good Luck to you and have allot of FUN!

Go a little tex mex- Nacho Bar (cheese, black beans, refried beans, ground beef, tomatoes, gr onions, cilantro, jalapenos, pico, salsa and sourcream), Mexican Beer, easy to prepare, easy to serve. Gives you lots of time to goof off with friends.
You can buy nacho cheese in a can in most stores or use velveeta melted with salsa, super easy.
