Well, for the chocolate fountain, that's easy. Use what they use at The Melting Pot with their chocolate fondue: marshmallows, chocolate marshmallows, strawberries, pineapple, banana, poundcake, cheesecake, and brownies. Granny Smith apples or cherries would be good also.

I would do a Mexican food buffet. Cheap and delishh! Make hard and soft tacos, burritos, enchiladas, tostadas, yummy Spanish rice, refried beans, black beans, chips and salsa, nachos, guacamole and sour cream, queso, pico di gallo, warm corn tortillas, margaritas, Mexican beer if you're old enough...and I'd say to make sopapillas for dessert, but you have the chocolate fountain. Can you mix tequila with the chocolate? Or soak the fruit in tequila?

Great dippers for a chocolate fountain:
Strawberries, grapes, apple slices, store bought cookies, marshmallows, cherries, graham crackers, dried fruits, pretzels, potato chips.

Here's a recipe for a great dip:

Buffalo Chicken Dip
6 Chicken breast halves cooked and chopped.
Return Chicken Breast to a large skillet and add:
1-10oz bottle of Frank's Hot sauce
2-pkg. Cream Cheese
1 cup chopped celery
on medium heat.

Remove from heat and stir in 1 cup blue cheese dressing.
(the recipe called for Marzetti, but I used generic)

Transfer this mixture to a 9x13 pan. Top with 2 cups shredded cheddar
cheese. Bake at 350 degrees for 30 minutes.

Serve with Tortilla chips.

Delicious!

Finger sandwiches- try egg salad, tuna salad and chicken salad and one of my personal faves cucumber sandwiches ( layer of cream cheese topped with slices of cucumber on white or wheat bread), put out a tea pot of hot water and offer several different types of tea. Cookies are also a nice offering with the sandwiches and the tea.

I went to a holiday tea party last week and it was so simple yet so elegant.

With the chocolate fountain try strawberries, pineapple, bananas, oreo cookies, and pretzels.

Indulge. Little tempura veggie platters, spicy and sweet things like sweet and sour prawns, made into a stuffing for mushroom caps. That will make some expensive but delicious items go a long way. Make little crab cakes using cod or other easily affordable fish, serve with white and red sauces.

Pitchers of sparkling wine with slices of pears in them. Yum. You could add a drop or two of bitters or grenadine to a pear slice and place one slice in each glass. Pretty, sparkling wine is inexpensive, and tasty.

Wish I were there.

We usually have a pot-luck consisting mostly of finger-foods. Some hot, some cold. And vino! Merry Christmas. :)
