You can use soymilk for cooking, etc. but I prefer not to because, quite frankly, there are still some unanswered questions around the health and safety of soy-- or at least unfermented soy. I would use something like a brown rice 'milk' or a nut milk (almond, for example) that you can just make up in your blender (Vitamix would be preferred) with soaked (overnight) nuts or highly blended cooked brown rice (or you can buy the commercial, ready-made stuff with its additives). With these substitutes for dairy don't over-cook-- just add them in at the end of the cooking process. Just use filtered water for baking.

Yes, yes, and yes :)
Soy milk can be used in the place of cow's milk for most recipes and uses. One exception that I know of: it will not work to thicken instant puddings, but will work in cooked puddings.

Yes and Yes.. note it doesn't curdle like regular milk does. Note for puddings if U want to thicken the pudding using soya milk add 2 tsps. corn starch. I prefer coconut milk the thick variety. I use soya milk when I can't get coconut milk!

Oh yes. I use it to replace cows milk in almost everything. It even does just the trick in baking and cream sauces. I sometimes use the vanilla flavored in my pancakes, cookies, muffins and cakes. Unless you have a very sensitive pallete, you probably won't notice the difference.

The beauty of soymilk is that it can be used in virtually anything in place of milk, and it is so much healthier. Use it in any recipe that calls for cow's milk.

I don't know about soups, but I do know that it's excellent for baking. I've used it plenty of times for making vegan blueberry waffles. Yum!
