I like just butter (real) but sometimes, I put fruit fillings in the lefsa, roll it up, and put some whipped cream or Cool Whip on top. Or butter and sugar.
Another common way to eat lefse is to put jam or jelly on it. When I was in Norway in June of 1996, a relative served it to us with a sour cream and sugar mixture spread in the lefse.
Spread lefse with creamy horseradish, cover with slices of dried beef, and roll up. Even better--roll this up around a stick of pickled or canned asparagus.
Spread lefse with mayo, scatter with feta and chopped olives, and roll up.
Spread lefse with turkey salad (this happened because we had a lot of left-over smoked turkey), add shredded lettuce, and roll up.
