In order to make chicken fried rice:
1. Take steamed rice 3/4 cooked after draining.
2. Chop some veggies like - cabbage, capsicum, carrots, french beans, spring onions and any other that suits you.
3. Heat some oil in a wok or karahi or pan.
4. Add all the veggies in the pan and stir fry for about 2 - 3 mins. or till they are done to your liking.
5. Take some boiled shredded chicken and add to the veggies.
6. Now add some seasoning:
Salt to taste, Ajinomoto (sprinkling), Pepper powder, green chillies(chopped), dash of vinegar and some soy sauce.
7. Toss the veggies & chicken in the pan so that the seasoning blends uniformly.
8. Add the steamed rice to the pan and mix the entire ingredients in the pan.
Your chicken fried rice is ready to be served with some clear soup made of chicken stock.

Fried Rice

Ingredients

Rice 2 cups
Onion 1 medium size
tomato 1 medium size
Garlic 7 to 8 cloves finely chopped
Soya sauce 1 tbsp
Vinegar 2 teaspoon
Sugar 1 teaspoon
Red chilly pwder 1 teaspoon
Oil 2 tablespoon
Salt as required
2 cups mixed vegetables like carrot, beans, cauliflower & cabbage. (These vegetables should be cut in large pieces)
One small cucumber cut into 2 inch pieces
1/2 size lemon

Method:

The essence of Thai cuisine is to cook on a very high flame so that the nutrients of the ingredients is not lost.


Wash & cook rice in such a way that one grain should not stick to other.
Place a karahi with oil on a high flame
Add finely chopped garlic ,stir fry.
Add onions ,fry for a minute.
Add tomato.
Add the mixed vegetables & salt. Keep on stirring till the vegetables are done.
Add rice,soyasauce ,vinegar,sugar & chillipowder.
Apart from cooking rice, this recipe takes just 10 minutes to be ready. While serving garnish it with cucumber slices & lemon wedges.

Butter Chicken

Ingredients

Chicken - 300 grams, cleaned and cut into small pieces
Cinnamon- 2" pcs
Salt - to taste
Cashew & almond paste - a handful ground smoothly
ginger & garlic paste - 2 tspns
onion - one chopped
turmeric powder- 1/4 tsp
chilly powder - 2 tsp
coriander powder- 1 tspn
orange colour - 1 1/2 tsp
butter - 3 tspn
oil - 2 tspn
tomato puree - 2 tomatoes blended smoothly

Method:


Fry onions in oil till transparent.
Add cinnamon and let it fry.
Then add ginger & garlic paste along with a little water.
Stir continuously.
Add turmeric, chilly, coriander powder with salt and mix well.
Pour in tomato puree, cashew & almond paste - mix well with water.
When it starts to boil add the chicken which should be mixed with a little colour.
Then add sufficient water for the chicken to boil.
The gravy should get thick or according to your requirement.


Rasmalai

Ingredients

Milk Powder - 1 cup
Egg - 1
Baking powder - 1/2 teaspoon
Milk - 1 litre
Sugar - 1 cup

Method:


Keep milk & sugar for heating.
Mix milk powder & baking powder
Add egg to it & make small balls.
Add the balls to the boiling milk.
Boil for 10 minutes on high flame.
Serve when cool.

2 lbs Cows Milk or Ricotta cheese
1/2 cup sugar
32 oz half & half milk
A pinch of saffron
1/4 tsp crushed cardamom seeds
1/2 cup blanched almonds
2 tbsp crushed green pistachios

Method


Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
Bake at 350 degrees for 35 minutes or until it sets. It should not get brown.
Remove from oven, cool at room temperature and cut into 2" squares. Place them in a dessert bowl.
Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
Decorate with pistachios, chill for 2-3 hours and then serve.

In the superstore, fruits are usually picked out much too soon. Some are rocks, many are wrong. Some of the fruit and vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
