I often try to imitate chinese's restaurant's sauce but it doesn't quite have the flavor and texture as the chef down the street. I've just gotten married and want to cook for my newly wed husband, instead of buying TV dinner all the time. Thanks!

The short cut is to buy some ready made Chinese sauces and you just need to heat oil, stir fry some garlic and ginger then add the sauce with other ingredients, stir-fry or braise, it is quick & easy.

Oyster sauce, soy sauce, black bean sauce are mostly used in Chinese cooking, I would suggest you to try "Lee Kum Kee" oyster sauce as marinade for chicken / beef or pork, or you may mix some oyster sauce with a bit of sugar, sesame oil, corn starch + chicken stock then add to your stir-fried ingredients then stir fry again till the sauce is thick.

Lee Kum Kee also produce "garlic black bean sauce", "Satay sauce", "chili sauce", you may find their products in Asian grocery store - http://www.lkk.com

Mix some soy sauce with sugar, ginger, all spice powder and a little oil. You could marinade with this, or just use it to stir fry. My husband loves it. Add sugar to taste...depending on how sweet you want it. It's kind of like teriaki sauce.

to make the thick sauce

1. Sweet sour flavor :Add 1 tbsp tomato sauce and 1 tsp sugar

2.Black bean flavor: black bean paste( just one tsp ,very salty paste ) then add 2 tsp corn flour mix with 100ml water into the wok ,stir fry for a while.


you may add some Ingredients too like
garlic gingers ,spring onions, onions and peppers.

here is the dish i jsut post you may like to try it at home ,

Jin -du style spare ribs

ingredients:

600g of pork ribs(chopped)

Marinate sauce
1 tbsp Chinese wine ( or sa –ke, rice wine )
1 tsp salt
1 tsp sugar
2 tbsp corn flour
½ egg beaten

Seasoning:

1 tbsp chili sauce ( or just light soy sauce )
2 tbsp tomato sauce
1 tbsp sugar
2 tbsp water
2 garlic cloves (chopped)
1 onion, peeled and chopped

2. bowl of oil

Method
1. Wash the ribs then cut the pork rib into about 1 1/2 inches long
2. Marinate the ribs with the marinate sauce mix them thoroughly for 30-60 min
3. Prepare gravy, mix all the seasoning all together (except garlic and onion )
and put into a bowl set aside.
4. Heat 2 bowl of oil, must see bubble then put in the seasoned pork ribs and
fry high fire then reduce to medium fire until it cooked ( about 3-5 min )
then can scoop up and set aside.
5. Leave about 2 tbsp of oil in the wok, put garlic and onion stir fry 30 sec ,then pour in the gravy to cook, until bubble, put in the fried pork rib to stir evenly, after stir a while the sauce been reduce to shiny then serve.
*** if you fancy green peper or cumber you can add it too ***

A good soy sauce, Fresh ginger , C|hili paste (??) Garlic blackbeans sauce, Good wine white or red, Cornstarch & water to thicken
