I'm referring to the poultry marinade you often find in the Latin section of a supermarket... basically a blend of vinegar, citrus juices, and spices. My local supermarket started carrying it in gallon-sized jugs. This is convenient for us because of how much we use it, but it's a bit large to keep in the refrigerator.

I know that most things containing vinegar (hot sauce, etc) don't require refrigeration, but is this case I wasn't so sure because it also contains fruit juices. Is mojo marinade safe at room temperature after having been opened?

I had a small bottle that I didn't refrigerate once...it oxidized....and turned colors. so, I'd put it in the fridge
if you are in a cool area, you might be able to store it in your garage or something over the winter.

I would put it in smaller containers and refrigerate to be safe. Fruit juices tend to spoil quickly when not refrigerated.
