Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro

Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.

Mediterranean Couscous
1 c Chicken broth
1 ts Dried basil
1 cl Garlic
3/4 c Couscous; uncooked
1 1/2 tb Balsamic vinegar
1 1/2 ts Olive oil
1/4 ts Pepper
1/8 ts Salt
3/4 c Seeded, chopped, unpeeled

Bring chicken broth, basil and garlic to a boil.
Stir in couscous. Remove from heat; cover and let
stand 5 minutes.
Combine vinegar, oil, pepper and salt well.
Fluff couscous with fork, combine with dressing
and tomato

1 TB veg broth
3 cups vegetable broth
2 carrots, peeled
2 turnips, peeled
1 sweet potato
1 zucchini
1 red pepper
Cut all veggies in strips - julienned

1 can garbanzo beans, drained
1 12 oz. or 15 oz. can tomato sauce
1/4 tsp. cinnamon
1/2 tsp. turmeric
pinch of saffron
pinch of curry
2 cups couscous grains

In a large saucepan, saute onion until lightly browned. Add vegetable broth
and bring to a boil. Transfer to a large pot and add carrots, turnips, and
potato. Simmer 15 mins. Lower heat and add zucchini and pepper. Cook 20
mins. Add beans, tomato sauce and spices. Cook til heated through.
In a separate pot, bring 2 1/2 cups of water to a boil. Add couscous, cover
and take off of heat. Let stand 5-7 minutes, fluff with a fork and serve
with vegetables on top.

Here's my favourite way -- as a couscous salad.

I mix cooked, cooled couscous with:
diced tomato
chopped seedless (English) cucumber
diced green or red pepper
olive oil
lemon juice
lemon zest
salt and pepper
cumin

Tastes yummy -- enjoy!

Two easy recipes:

(When it comes to quantities I play it by ear)

-Peel and mince garlic cloves. Heat olive oil at med temp, add garlic. When garlic smells good but it's not brown yet add chicken broth and bring to a boil. Cook couscous in this... Once it is cooked, add slivered almonds or pinenuts and raisins.

-Put in the blender chicken or veg. broth, garlic, bunch of parsley. Once smooth, add 1 tomato and "pulse" a few times to barely crush it. Put this mix on high heat, once it boils add the couscous. When couscous is cooked add extra virgin olive oil. Add lemon juice if you feel like it, too.

I was In Indonesia A few years ago and came across a fruit called Durian, it was given to me by a Friend that was not going to be a friend for long after giving me this. It's a long story but the long and short of it it tasted like Cr ap. Really But as i was there for some time i had other foods that had been flavoured by this fruit. The taste was magnificent. My wife is Asian and she loves this stuff so i know it's easy to get in most Asian stores .

have you ever tried bouillon powder? when you measure up the right amount of boiling water to go into couscous, add the powder and then poor onto the couscous and there you go, its sooo yum

i love to cook it with a combination of hot spices including cayenne and jalepeno powder. I also cook it with diced mushrooms, which i think soak in alot of the flavour and add something to the couscous, which is obviously already tasty.

Also, have you ever tried it with basil, oregano, and tomato flavouring?

The liquid you soak it in can have loads of spices and stuff like cinnamon, lemon, clove, turmeric, cumin, saffron. Finely dice vegetables like cucumber, courgette, carrot, peppers and red onion, add some chopped herbs, toasted pine nuts and raisins. Fab with roast lamb, hummus and flatbreads!

You can add many variations such as pureed spinach or diced tomatoes.

Even mint & paprika works great.
