Try a good quiche. People always think they're fancy and hard to make, but they're so easy and taste great. Serve this with a fruit salad. Put together the crust the night before and the rest in the morning. I like this recipe:

You can also try a baked french toast casserole. Again, you put it together the night before and slide it into the oven in the morning. Pair with bacon or ham and fresh juice and coffee. Paula Deen makes a good one - Delicious!

I would have a couple of breakfast breads already done (German Stollen for example). In the morning, scramble some sausage and cook till done. Drain off excessive fat. Mix your eggs into the sausage with a little milk (to loosen the sausage bits and make the eggs fluffy). Add shredded cheese to the mixture and cook till eggs are done. Serve with fresh fruit or juice. That way, they can have an easy plate and enjoy each others company.

Traditional Eggs Benedict


1 teaspoon vinegar
4 eggs
4 thin slices Canadian bacon
2 English muffins
Hollandaise sauce:
3 egg yolks
1 tablespoon hot water
1 tablespoon lemon juice
1 stick unsalted butter, melted and hot
Salt and pepper
Paprika
Chopped parsley

In a large skillet, bring 2 inches of water and the vinegar to a boil. Crack one egg into a glass. Reduce water to a simmer and pour egg into water in one quick motion. Quickly add remaining eggs. Let eggs cook for 4-5 minutes. The white should be firm but the yellow should be runny. Remove eggs with a slotted spoon and drain on a paper towel.
In a non-stick skillet heat the bacon until warm. Toast the English muffins until golden.

For the sauce: Place yolks, water and lemon juice into blender. Blend for 1 minute. With blender running, pour butter through open hole of blender lid. Season with salt and pepper and keep warm.

To assemble eggs benedict: Top each muffin with bacon and a poached egg. Pour warm sauce over and garnish with paprika and chopped parsley.

Alternatives: Vegetarian: Substitute wilted spinach and a grilled tomato for the ham.

There's something called Scotch eggs which consist of wrapping seasoned sausage meat around hard boiled eggs. Joy of Cooking has an oven baked version rather than deep frying. You can prepare them ahead and just bake. You can also make crepes, (they stack well) ahead of time and have a variety of fillings. Cooked sliced apples with a sprinkle of blue cheese makes a delicious filling. Bagels, muffins and purchased coffee cake, a selection of individual juices in an ice-filled pan, lots of coffee and/or tea. and above all, served with your prettiest dishes and cloth napkins. Your in-laws will be so happy that their son has such a clever,and thoughtful wife.

Eggs benedict, and then have a variety of breakfast breads (banana nut, pumpkin, etc) and cream cheese. Coffee cake for something sweet. (or something else sweet as an option, like maybe a baked french toast or something. . .) Then, have some fresh fruit. Coffee, tea, juices, and milks. Maybe other smaller things, if kids might not like that stuff, like bagels and cereal on hand!

how about the fratata(spelling?) It's like a quish without the crust. I like with fresh tomato, spinach, red bellpeppers. Serve with fresh fruit tray. Or just a breakfast burrito open buffet style-- sauteed or fried potatoes or roasted, roasted veggies, eggs, cheeses, picante or salsa. Even break out the blender for fresh fruit or frozen berry smoothies.

I love those breakfast casseroles that you make the day before - and then just pop them in the oven while you're opening presents. The Jimmy Dean casserole recipe is good - or check allrecipes.com for other ideas.

sausage/egg scramble and side of fresh fruit. Fry up your sausage first, drain, then add your scrambled eggs. You can add onions, red peppers etc. to the sausage or premake as well, sprinkle some shredded cheese on top when all are cooked, mix together. Serve a side of fresh fruit and yogurt too for a healthier option.

How about a summer quick favourite? Toasted bagel with melted chocolate, Swiss or Munster cheese and a tomato slice. Or oatmeal with peanut butter chunks?
