FABADA ASTURIANA (a white bean stew from northern Spain)
COCIDO MADRILEÑO (a chick pea and vegetable stew with chicken, beef and chorizo sausage, recipe from Madrid)
CALLOS A LA MADRILEÑA (beef tripe stewed with chick peas, chorizo sausage and morcilla (blood) sausage, Madrid recipe).
TORTILLA ESPAÑOLA (spanish omelette) this is just about THE spanish national dish... eggs, diced potatoes, diced onion and one chopped green pepper, if made properly it comes out looking like a one layered cake.
Then you have PAELLA from Valencia,
GAZPACHO (Cold tomato soup) and any number of fried fish dishes from Andalucía.
Desserts:
CREMA CATALANA (a creamy custard dish with a crust of sugar that has been browned in the oven (recipe from Barcelona)
TARTA DE SANTIAGO a delicious almond cake typical in Galicia
ARROZ CON LECHE a creamy rice pudding cooked with a lemon peel and a stick of cinnamon.
LECHE MERENGADA a summer dessert made of milk, sugar, cinnamon, and lemon peel, all boiled together then frozen (like an icemilk).
Beverages:
SANGRÍA a summer drink made with several chopped fruits, usually apples, lemons and oranges, marinated at least 4 hours, with sugar, cinnamon sticks, brandy and an orange based liquor such as cointreau, then added to red wine and fizzy lemonade and/or orande soda
SIDRA in northern Spain is an apple cider, (with a degree of alcohol lesser than wines) it's typical of Asurias.
WINES:
SHERRY, dry wines from Jerez de la Frontera
Red wines from Ribera del Duero, Rioja, Penedès, etc
Muscatel and sweet wines from Málaga..
