I am biased,
Filipino food!
Pork Sinigang, and Chicken Tinola, with green papaya. Great on cold days. the Sinigang may be to sour for some tastes, but Chicken tinola is pretty easy. You can substitute chayote for papaya. Still really good. Try it, you won't be disappointed!
Korean food also, Bulgogi, and SamGyupSal with as many different Kimchee recipes as you can find. Onion and Cucumber kimchee are my favorites.
Italian more lately too, made a great Ragu Bolognese the other day. Good stuff.
German and Polish quisine on occasion, I like to switch off on the weekends and if I'm cooking from one cuisine, I try to do all dishes that would be served from that given country.
Oh that reminds me, also Greek food!

My fiance is Turkish, so I'm currently loving Turkish food, particularly a dish called eggplant cream. I also love Ethiopian. All those spicy veggies in that awesome flat bread? Yum-o!

My favorite ethnic food is frybread / scones, with stewed deermeat or goose with dumplings and wild rice, corn, beans and squash.
Thats a real Native American meal

wow I'm not sure there are so many different cultures but when it all comes down to it i have to go with "soul food" its hearty and is sure to fill you up, and even though many people like to say its American it really isn't the food white people eat is from the food black people found and plus we add more spices and "flavor" if you will but i love Chinese food as well and second to soul food,HAS to be Italian but come on everyone loves Italian food, and i don't mean like lasagna and spaghetti i mean like linguine de ricotta and zitti al forno and things that don't involve pasta which is what people always associate with Italian food, i mean like duck and chicken to, they have some great "meat" if you will recipes.

My favorite food is, pallea, garlic shrimp, while I am African American I love Spanish/Portuguese foods as well as a lot of Italian dishes, the more garlic the more I love it.
