The difference is the type of noodle used. Lo mein is cooked with a thick long noodle, much like linguine but a little thicker. Chow mein is cooked with a thin crispy style noodle.

Lo mein is large soft noodles sauteed without sauce, with some meat and/or veggies. Chow mein mostly veggies in white sauce over crispy small noodles.

lo mein is soft noodles, chow mein in crispy noodles.--I can get so addicted to lo mein --not thrilled with the crispy--except plain as a snack,. MMm--I know what I'm having for dinner tonight!!! (chop suey is the rice)

Lo mein is thin spaghetti-like noodles, and chow mein is wide, thin noodles. Although I noticed only since moving to California that they lo mein, except they call it chow mein. I have yet to figure out why they do that...

Both are noodles - lo mein is soft and gooey. Chow mein is sturdier - yummy when stir fried with veggies.

Lo Mein

Although this is for beef lo mein, just substitute chicken or shrimp.
This is from the Chinese Village Cookbook by Rhoda Yee. It is great,
and kids love it!

1/2 lb egg noodles (I use the 12 oz package)
1/2 lb flank steak

1 tsp. cornstarch
1 tbsp light soy sauce
1 tsp. sherry

1 clove garlic, crushed

sauce mixture -
1 tbsp cornstarch
1 c. chicken stock
1 tbsp soy sauce
2 tbsp oyster sauce

1 tsp sesame oil
1 stalk green onion,diced
2 tbsp. oil

Par boil fresh egg noodles for 3 minutes. Rinse with cold water
and drain. Slice beef into 1/8-inch strips across the grain. Marinate
for 15 minutes. Prepare sauce mixture. Have a pot of hot water ready.

Heat wok. Add 2 tbsp oil and reheat. Add garlic; brown.
Discard. Add beef and salt stir until 3/4 done. Add sauce mixture
and stir until thickened. Add green onions and sesame oil. Mix
well and keep warm. Drop noodles into hot water. Stir for a
minute to heat. Drain well. Pour meat and sauce over noodles.

In China, chow mein is made with soft noodles. For crispy chow mein noodles, add more oil than the recipe calls for and cook the noodles longer to dry them out. You can substitute shrimp or pork for the chicken.

Serves 4 to 6
CHICKEN CHOW MEIN

1/4 c. vegetable oil
1 tsp. salt
1/4 tsp. pepper
2 c. sliced Chinese cabbage
3 c. thinly sliced celery
1 (1 lb.) can bean sprouts, drained
1 (4 oz.) can water chestnuts, sliced
2 tsp. sugar
2 c. chicken broth or water
2 1/2 tbsp. cornstarch
1/4 c. cold water
1/4 c. soy sauce
2 c. sliced cooked chicken, cut in slivers
Chow mein noodles

Heat oil, salt and pepper in deep skillet. Add cabbage, celery, bean sprouts, water chestnuts, and sugar. Stir in chicken broth; cook about 10 minutes. Blend cornstarch, water and soy sauce. Add to vegetable mixture and stir until mixture thickens. Add chicken. Heat through. Serve over hot chow mein noodles. Yield: 4-6 servings.
For Chicken Chop Suey serve on cooked white rice.

Lo mein is a noodle based dish with veggies and meat. chow mein is nothing but veggies and meat. i love them both

lo mein is soft noodles that might be used in chicken noolde soup........which can be served by itself.....chow mein...is consist of onions, celery, plenty of chinese vegetables which can be served over a bed of rice.....very good if you like a lot of vegetables.....
