Baileys has launched a Drinkable Desserts contest to promote their new flavors of cream liqueurs - Baileys Mint Chocolate and Baileys Caramel - which were created to give fans of Baileys Original Irish Cream a few new flavor options. The contest calls drinkers to come up with a drink recipe that features one of the three flavors and is inspired by a real dessert, making the cocktail a drinkable dessert and a holiday indulgence.
You won't be able to see all the recipes and vote on your favorite one until after December 18th, but that still gives you plenty of time to pick up a bottle of Baileys so that you can give your favorites a try over the Christmas holiday or New Year's. The voting will last until January 21st, when the winning recipe will be selected. The grand prize winner will receive a trip to New York City for two for a private cooking class in the Gourmet Cooking Arts Center with Chef de Cuisine, Jennifer Day and the winning recipe will be featured in the April 2007 issue of Gourmet magazine.
Baileys Caramel Apple Pie-tini
1 3/4 oz Baileys with a Hint of Caramel
1/3 oz Smirnoff Twist Green Apple Vodka
1/3 oz Applesauce
Dash of Caramel Syrup
Pour the applesauce into bottom of glass and float dash of caramel. Shake all other ingredients with ice in a cocktail shaker, strain and float on top of the applesauce and caramel. Garnish with a slice of caramel apple.

Well if you are entertaining, I would keep it simple. If you get too much into mixing drinks with several ingredients you will not be the host you will be the bartender. That being said here are a couple of punch recipes you can pre-mix. Put everything in them but the alcohol & ice so you can just put ice in the glass, pour a shot and add the punch.
3 cup pineapple juice
3 cup grapefruit juice
1-1/2 cup fresh lemon juice
7UP
The Liquor: Southern Comfort
Directions:
Pre-chill ingredients. Mix ingredients in pitcher all but the 7UP
Serve in a tall glass. Southern Comfort over ice filled to the top of the glass. add punch mix till glass is 3/4 full and top with 7 up.
Mamarita Punch.
1 Qt bottle Strawberry daquri mix
1/4C Roses Lime Juice
4 C pineapple juice
For the Liquor: Captains Morgan's Dark Rum
Directions:
Chill the ingredients. Combine strawberry mix, lime juice and pineapple juice in a bottle or pitcher.
Fill a tall glass ( to the top) with ice, Put 1 shot 1-1/4 oz. Rum in the glass, add punch mix till glass is 3/4 full, add7 Up to the top.
You can garnish if you like but, no one will really care.
For those who don't care for fancy drinks keep a bottle of each of the following on hand:
Rum, vodka, gin, whiskey (canadian & blended), scotch, tequila and dry vermouth. ( they will tell you how to make what they like)
Mixes you will need for those are, club soda, coke, 7 Up, water, OJ, grapefruit juice and tomato juice. Tobasco sauce, stuffed olives, lemons & limes. Salt & pepper.

Cherry Cheesecake Martini
1½ oz. Dr. McGuillicuddy’s Vanilla Liqueur
¾ oz. Vodka
Splash Cranberry Juice
Combine in an ice filled shaker; shake and strain into a chilled cocktail glass. Garnish with a maraschino cherry.

For frosting the glasses (optional):
Freshly squeezed lemon juice
Sugar
1 cup Cognac or good brandy
1/2 cup Triple Sec or Cointreau
1/4 cup tablespoons lemon juice
Maraschino cherries or lemon peel, to garnish
If you want to frost the glasses, dip the rim or 4 martini glasses in a shallow plate of lemon juice and then in the sugar. Allow to dry for 15 minutes.
Combine the Cognac, Triple Sec, and lemon juice in a pitcher. Pour some into a cocktail shaker with ice, shake well and pour into the glasses. Garnish with a cherry or lemon peel.

Ya Ya Punch
This is a tasty and slightly tart drink. Watch out, this is one that will sneak up on you.
1 C. Pineapple Juice
1 C. Cranberry Juice (or Cranapple Juice)
1 Jigger Vodka
1 Jigger Peach Snapps
1 Jigger Coconut Rum
Splash of Grenadine
Mix all together in a small pitcher, and pour over ice.

Apple Jack
1 Gallon Apple Cider
1 750 mil vodka
10-12 Candy Cinnamon Balls
Pour out enough cider to add the vodka bottle. Drop in the candy and let set overnight so the candy will dissolve. Shake before serving.
