The simple answer--- Yes-- the fish is fine and you will not get sick. However, if you have any rice with it-- the rice will be hard and will make the rolls (that's if you're eating rolls) not taste as good. But what I normally do, is just eat the fish out of the rolls and skip the rice ;)

RE:
Can left over Sushi kept in the fridge for a day be eaten today?
I purchased a lot of Sushi's yesterday and have some leftovers. I kept in the fridge thinking I might eat it today. Is it healthy and hygenic to eat left over sushi's?

Oh yeah, it's fine! You have no idea how many times I've had leftover sushi for breakfast! Can't let that go to waste!

Food suppliers tend to err on the side of caution - chances are it probably will be ok on Sunday... BUT, if I were you I'd cook them (thoroughly) & eat them tomorrow (ie Saturday). No point risking any more than you have to.

If there's anything raw, discard it. If not it's still edible. Sushi should be eaten as fresh as it's made.

I eat leftovers of one day, because of the fish no longer than that.

Sushi does not need to be refridgerated, the seaweed acts as insulation. Sushi will not go rotten or moldy even if you leave right on the table for a few days. So, to answer your question, yes.
