Ingredients:

2 can chickpeas, drained
1 cup chopped tomatoes ( or more if you like tomatoes)
1/2 cup minced onions
1/2 cup sliced celery
1 cucumber sliced and chopped
2 teaspoons minced garlic
1 teaspoon dill weed
salt & pepper
3 teaspoons red wine vinegar
1/2 cup olive oil
Instructions:

Mix oil & vinegar well and set aside.
Combine all other ingredients and toss with the oil and vinegar mixture. Chill before serving and garnish with fresh parsley, if desired.

tabbouleh salad
INGREDIENTS
1/4 cup bulgur
1/2 cup boiling water
1 cup chopped parsley
1/4 cup chopped fresh mint leaves
5 tomatoes, diced
1 onion, finely diced
2 teaspoons olive oil
1 lemon, juiced
salt to taste
DIRECTIONS
Place the bulgur in a small mixing bowl. Add the boiling water, mix and cover with a towel; Let stand for 1 hour. Drain any excess water.
Combine the parsley, mint, tomatoes, onion, olive oil, lemon juice and salt. Add the bulgur; mix well and serve.



Greek Salad
2 tablespoons McCormick® Gourmet Collection® Greek Seasoning
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
1/2 cup olive oil
1/4 cup crumbled feta cheese
1 head romaine lettuce (or 8 cups mixed salad greens)
1 medium cucumber, peeled, halved, seeded and sliced
1/2 cup kalamata or black pitted olives, sliced
1 cup cherry tomatoes, cut in half
1/2 medium red onion, cut into rings
DIRECTIONS
Blend together Greek seasoning, lemon juice, vinegar and oil in a small bowl. Gently stir in cheese. Refrigerate 15 minutes or longer.
Meanwhile, wash, dry and tear lettuce or salad greens into bite-size pieces. Place lettuce and vegetables in a large bowl. Just before serving, stir dressing; pour over salad. Toss to coat. Garnish with onion slices and extra feta cheese, if desired.

2 red bell peppers
2 yellow bell peppers
2 green bell peppers
4 medium onions, sliced into cresents
2-3 tablespoons olive oil
1 cup tomato juice
6 medium tomatoes, cut into wedges
1 teaspoon salt
1 teaspoon pepper
1/2 cup red wine vinegar
\Cut all the peppers in half length wise and de-seed them.
Cut all the peppers, length-wise, into 1/2 inch slices.
In a large covered pot, saute onions in oil until translucent, then add the peppers and cook for 5 minutes.
Add tomato juice, cover and cook on med heat for 5-10 minutes.
Add tomatoes, salt and pepper; cover and cook another 15 minutes.
Add vinegar, cover and cook another 10-15 minutes.
serve hot, cold or at room tempreture.
Excellent side dish with almost anything

Look up recipes for tabouleh or tabouli. They also have some partial mixes at the grocery store, and some stores carry it pre-made.

It is really good though, isn't it?

Mix whatever salad ingredients you like .. cuckes, tomatoes, peppers, red onions, chick peas, etc. with some lemon juice, good quality olive oil and fresh mint or parsley. Season with salt and pepper.

It is too easy just cut the tomato and cuocumber into small pices then watergress , parcely . greenpepper mix that together , add oil, salt and little vinegar or some limon juice . good apitite.
