First, you need to find out what kind of vegetarian they are. This is important! Some veggies eat egg and dairy products, some eat one but not the other. It is important because a non-dairy eating veggie will not eat mac and cheese, and a non-egg veggie won't eat anything with eggs in it, including cakes and pies.
Your best bet is to ask THEM what kind of foods they like. It may seem forward, but will make things at the dinner table much smoother and comfortable for them (i.e. they won't spend tons of time asking you the ingredients of every dish).
Also, fixing simple vegetable dishes like a nice vegetable salad with a light non-dairy or non-egg dressing will satisfy all types of veggies/vegans. A fruit tray will also work. Fresh fruit is always a plus and it's healthy for all attendees. Even little party favorites like a mixed nut tray is good (if no one is allergic to nuts).

Vegetarians do not eat fish or chicken. I hate that people always say that.
Some Vegetarians don't like eating the meat alternative things like Quorn and veggie burgers and things so check that first.
I'm a V but I'm just having the same as everybody in my family at Xmas except my mom bought this Quorn roast joint thing and as long as my mom doesn't buy those goose-fat potatoes from tesco (what a crap job that would be, cuttting the fat of off dead geese)

Vegetarian Christmas dinners can be a lot easier. Consider serving some stuffed portabello mushrooms, or a platter of stuffed mushrooms, peppers, and tomatoes that everyone can enjoy as a side dish. Stuffings that work well for vegetarians are chestnut stuffing, or melted cheese (blue or mozarella cubes) in small mushrooms or baby tomatoes. If you are pushed for oven space, you can even do them in the microwave.

Nut roast is the traditional thing for veggies and vegans at christmas. You can even buy a mix in a packet from a whole food shop which you just add water to and shove in oven. Dead easy and they taste nice. Also all the usual stuff - roast potatoes, leeks, parsnips. Try roasting whole cloves of garlic. Brussel sprouts. Veggie burgers, salads, carrot sticks, humous. Butternut squash soup.
Christmas cakes, pudding, mince pies etc. If you've bought them in check the ingredients for animal fat. Watch out for gelatine in sweets. Get in some maja gold chocolate (green and blacks) cos your veggie visitor will probably appreciate fair trade produsts too.
If you want to buy them a present consider a book by Benjamin Zephania. He is a vegan rasta poet and writes stuff like 'Be nice to your turkey this Christmas, cos turkeys just wanna have fun. Cool

Anything but meat and meat products like gelatin.
You don't have to be traditional here since there is no traditional vegetarian Christmas fare. Make something simple but tasty. Perhaps a vegetarian lasagna. Or lentil curry with rice.

Try a Quarn Roast. Just don't do the spuds in meat juice. Get Bisto Onion Gravy and everything else is the same.
Thats what I will be having.

PS The big 'V' on the packets is a dead give away to Vegie Compatability.

Ask him/her what type of vegetarian he/she is. If it's a lacto ovo vegetarian (eats eggs and dairy products) you have more options than if it's a strict vegetarian or vegan.

I've been veg for almost 10 yrs. now. At holiday gettogethers I'm always happy eating all the different side dishes without meat. If you want something more creative, look at some recipes at the Food Network.

Uummm, vegetables. You can make lots of things without meat. you can make these delicious squash sandwich thingies. My mom makes them for us and they are sooo good. You take some of the big green squashes and cut diagonal circles (so that they are bigger) then you get some cheese (try something that isnt too melty or runny), you make little sadwishes with the squash and the cheese, then make like an egg merengue and dip them in the egg merengue and fry them, they are soooo good.
