sounds like a Mexican Wedding menu to me. What holiday are you referring to the 4th of July?

Nothing is missing, Not really, EXCEPT maybe some kind of a Holiday Punch or Beverage. Everything sounds yummy!

Here's my favorite appetizer recipe. You can serve it with the Guacamole & Chips if you like...?

MEXICAN TACO DIP:
1 (8 ounces) package cream cheese (softened)
1 (16 ounces) pint sour cream
1 package Taco Seasoning Mix
2 to 3 cups lettuce, chopped
1 tomato, chopped
1 small onion, chopped
1 (8 ounces) Cheddar Cheese, shredded
1 small can olives, sliced, drained
Tortilla Chips
Mix together cream cheese, sour cream and taco seasoning mix and chill overnight. The next day smooth mixture in a pan. Top with lettuce, tomato, onion and shredded cheese and olives. Refrigerate to chill. Serve with tortilla chips.


If you don't have a fruit dip; I make up a Lemon Fruit Dip combining a package of softened cream cheese, vanilla instant pudding and 1 3/4 cups milk....

a lot of cerveza and a couple big bottles of rum and fruit juice. to match your tex/mexiness try a cockatil made of a cheap spumante -- the malt stuff that is 4 bucks a bottle (verde? something like that) will work better than the actual stuff (less hangover) -- for a bottle add a cup and 1/2 of lemon or lime aid with some fruit slices served in a big pitcher like sangria. its fizzy its fruity and its celebrationy.

Maybe some punch? If it is an adult party, you could make sangria.... if there are kids I would stick to the non alcoholic variety. Pigs in a blanket always go over well when we have partys, same with deviled eggs. How about those teeny cocktail weenies in BBQ sauce in a crock pot? I adore those, we had them at my wedding and I never got any, disapeared pretty quick. Good luck with the party!

sounds great as is...I am passing along a really great corn bread casserole I always serve with chili..It is really easy and delicious...

corn bread casserole...

2 boxes corn bread mix
1 stick melted butter
2 cans whole kernel corn (drained)
2 cans creamed corn
1 C. sour cream

mix..bake 350 for about an hour or lightly browned and done in the middle....enjoy!

have some spanish fruit salad. mango, pineapple, melon, jicama, papaya lime juice chili seasoning something you can get from latino grocery store and red pepper if you want it spicy. finger sndwiches unique kinds like avacado, patrami, bologna, spam sandwichetc. have a nice punch with a little liquor in it.
