Shawerma is meat that is cooked on a vertical spit. If you've had Mexican meat cooked "al pastor" it's the same thing, vertical spit. Shawerma is served with Arabian flat bread (here we call it pita), tomatoes, onions, pink pickled turnip strips (in Arabic it's called "left"), hommos (a thick chickpea paste sprinkled with paprika and drizzled with olive oil), and tahina (a loose sesame paste), and sometimes a strong, white garlic paste. The meat can be sprinkled with chopped parsley. I've seen shawerma sandwiches rolled in lavash, a very large and very thin flat bread, and I believe it's Persian bread. When the meat is cooking on the spit, the fat flows down the meat first, basting it, then the excess drips off. It's really good, try it.

I'd like to be the pan that catches the drips, hehe!

I am not familiar with the recipe above. I have seen the things the author spoke of eaten on the side but never inside. When I was in the Middle East the following is what I experienced. There are many versions of shawarma. I do not think it is particular to any country although the word originated in Turkey.

Shawarma is a sandwich that is made from chicken with spices. The sandwich is filled with shredded chicken that has been cooked on a vertical spit the same way that gyro meat is cooked. Pickles and sometimes fried potatoes are added. The meat is wrapped in a very thin piece of bread called Shrock (previous author said Lavash and that works as well.... both found in Mediterranean stores) that has a touch of mayonnaise spread on it. After the sandwich is filled it is grilled to a golden brown to crisp the bread. It is served with a sauce sometimes that you can dip your sandwich in that is made from Lebneh (thickened yogurt) mixed with mayonnaise and garlic. It is FANTASTIC!

Shawerma is a Turkish dish
It's made from lamb meat or sometimes chicken breasts.
They put the raw meat (a large amount of it) ojn a big vertical mettalic stick that is placed on a special shawerma oven. The meat does like a big big shape then they turn the heat on and turn the stick so that the meat is cooked evenly, then they start to shred off pieces of meat from the surface and so on. They serve it with bread or in a plate.
the lamb meat is served with tarator (it's a sauce made of tahini and water and lemon juice)
the chicken is served with garlic sauce

Yummy

In Michigan, shwarma is associated with Middle East Cuisine. Typically, you can get lamb or chicken as the meat on the sandwich. The meat is marinated, cooked, and cut into strips. Here, it is served in the sandwich with pickles, tomato, and garlic dip. The bread is a thin flatbread, like lavash, and they roll it up.

It is one of my favorite sandwiches. If you like the ingredients, try it!
