I make a very simple leek side dish. It's just leeks in a cheese sauce To prepare the leeks cut off the root Take off any tired leaves and slice into rounds until the leaves have turned green and the first leaf has spilt. Drop into boiling water for a few minutes then drain. Test a piece of leek to make sure it's cooked. The cooking time for leeks varies tremendously with the age and size of the leeks. Arrange in an ovenproof dish and pour your favourite cheese sauce over the drained leeks. pop under a high grill for a few minutes until the cheese sauce bubble and one or two brown spots appear. Leeks reduce a lot in cooking, don't be disappointed if you end up with a lot less leek than you start out with. I love this dish, and serve it as a starter on it's own or as vegetable with seafood. I hope you try it and enjoy it. Oh, and yes, leeks are part of the onion family and are the national vegetable of Wales
