I am having a few friends in for supper after an afternoon of Christmas shopping. I will be serving a couple of choices of soup which I will have ready in crockpots and would like some ideas of different, tasty sandwiches to serve with the soup. I would prefer something that can be done mostly ahead of time and am considering open face, wraps, grilled, croissants, etc. I would appreciate ideas for something out of the ordinary. Thank you.

I make this awesome sandwich...
use three slices of bread. Between two we have mozza cheese and chicken, and between the other two (like a club house) but mozza cheese and ham. Then dip the sandwich in egg and fry in a pan, of course flipping (like a grilled cheese)... the cheese melts and it is amazing... the guests will love it

I make what I like to call "mininis" on my Foreman grill. Buy a loaf of ciabatta bread from your local bakery (supermarket or stand alone, it doesn't matter) and have it sliced there. Brush with some garlic olive oil, then put on the grill. Layer half a slice of mozzarella, then a slice of prosciutto accordion style, 4 asparagus pieces and then another half of mozzarella. It doesn't matter if you use the tips or the stalks from the asparagus, just as long as it's not the woody part and it's fresh, not canned. To trim fresh asparagus, take both ends in between your fingertips and bend the spear until it breaks. Use that as a guideline to trim the rest. Have your prosciutto sliced nice and thin. Pop down the grill and cook until nice and golden brown. Soooo tasty! Since a ciabatta loaf is maybe the size of your palm around and just over a foot long, you can get maybe 10 petite sandwiches out of them.
Feel free to substitute with fresh pulled rotisserie chicken, a salami would be good, anything your heart dreams up you can put into a sandwich. Since their small size, you can cook maybe 4 on a regular foreman grill. :)

This isn't fancy and is far from out of the ordinary: Using just regular sandwich bread make a variety of sandwiches. Make some plain cheese, turkey, ham, and maybe even BLT sandwiches. Cut each sandwich into 4 pieces. Arrange them all on a large platter, so your guests can pick a couple of each kind to suit their own tastes as an accompaniment for their soup.

Get a long crusty bread loaf, small in diameter, some grape or cherry tomatoes and fresh motzerella. Slice the bread so you have some bread rounds, place a slice of tomato and a slice of cheese on top and place in the oven just until the cheese melts. In the words of RR Yum-o

Cherry & Cheese Panini
Ingredients
1 tablespoon olive oil
1 large red onion, thinly sliced
1/4 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons balsamic vinegar
1/2 cup fresh sweet cherries, pitted and chopped
4 ounces blue cheese, at room temperature
1 (3-ounce) package cream cheese, softened
8 large, thin slices Italian or country-style bread
1 to 2 tablespoons butter
Preparation
1) Heat oil in large, heavy-bottomed skillet. Add onion and thyme and saute over medium heat for 3 minutes or until onion is tender. Stir in salt, pepper and vinegar. Scrape up any browned bits. Spoon onion mixture into a bowl and stir in cherries.
2) Mash blue cheese and cream cheese in a bowl until softened and creamy. Spread over 4 bread slices. Top each slice with 1/4 of the cherry mixture (about 1/3 cup). Top with remaining bread slices.
3) Wipe out skillet. Melt 1 tablespoon butter in skillet. Add 2 sandwiches. Press down with a spatula. Cook over medium heat for 3 to 4 minutes per side, or until golden. Remove and repeat with remaining sandwiches, adding more butter if necessary. Cut each panini diagonally in half to serve.
Use a blue cheese with minimal blue veins for a pretty presentation. Heavily-veined cheese may cause a grayish tint when mixed with cherries.
Cranberry Cheddar Sandwich
Ingredients
8 - slices sliced French Bread, toasted
4 - teaspoons butter
4 - slices canned whole cranberry sauce
4 - slices sharp Cheddar Cheese
Directions
Butter the 4 slices of bread. On the remaining 4 slices, spread the cranberry sauce on only one side.
Layer the cheese on the cranberry sauce.
Place the cranberry-cheddar side up on a pan and place under broiler.
Broil for 3 minutes or until cheese is bubbling.
Place the buttered bread on top of the cranberry-cheddar, butter side down.
Carrot, Onion and Lemon Soup
Ingredients
One and a half pints of vegetable stock
1 Carrot finely chopped
1 Small onion finely chopped
2 Bay leaves
2 Sticks of celery chopped
Salt and pepper (a pinch of each)
A sprig of thyme
Method
Add all this to a saucepan, bring to the boil and then simmer for 20 minutes.
Add the scraped rind of a lemon (just the yellow part) to the soup, along with half the juice of a squeezed lemon (all you Led Zeppelin fans are now humming, no doubt...).
Serve straight way with a garlic roll/stick.

The Tuna soften... because of fact that's going with Tomato Soup. this night we are doing Beaverbrook, Lettuce, and Tomato sandwiches... that's 112 F exterior and that i'm no longer cooking interior the kitchen !!

Do paninis. If you go to the website for "panera bread" restaurant they have their whole menu online. They've got some great ideas for panini sandwiches. The turkey artichoke is awesome .
