Cheese takes a very long time to go bad....
Evidently if it has gone mouldy (and isn't a blue cheese) cut off the mouldy part, if it has gone all the way through the cheese, throw it away. If the mould is just on the skin, slice it off and use the inside, you will see that the flavour is fine.
Tender cheeses such as feta, cream cheese, etc. show if they have gone bad, as they form a brownish-yellow slightly gooey or sticky film across the surface and start to smell strong, and may even taste sour. If so get rid of them. Any small mouldy spots can just be removed as long as most of the cheese still retains its white colour
An aged or cooked cheese will just get stronger and become more aged.. If the crust has become too hard remove it and serve the inner part. It will be good.
If you don't want or don't have time to eat it all before you think it might "turn"... Grate it and freeze to use in pasta dishes.
Remember, not all cheeses that "smell bad" have gone bad...Limburger for example smells atrocious, but that is its normal smell. There are also several french cheeses with strong smells...
(If you have a brie or camembert type cheese and it has turned you will notice an ammonia-like smell... If you do, throw it away... (Some french people will still eat it eat, but the rest of us don't!)

I always look at the expiration date! I stop eating food the day before it expires. LOL with cheese, you will definitely see the mold.

You can usually smell a "dusty" like smell. It's not a very appetizing smell-you will know too if you try to melt it and it clumps. yuk
