Whoever said that "Mexican food derived from Spanish food," is just being silly or ignorant without knowing ANYTHING at all about Mexican food! Mexican cuisine is no more derived from the Spanish than Chinese cuisine is from the Bulgarian!

Almost ALL true Mexican dishes, especially the gourmet ones are almost entirely derived from ancient Mexican cooking styles of the Aztecs, Olmecs, Toltecs, Huastecas, Mayas, Yaquis, Puripeche, Huichol and others, LONG before the arrival of the Europeans.

Of course the Europeans introduced pork and some new foods to Mexico just as the Mexicans gave to the world chilies, chocolate, corn, agave and achiote. But the ancient Mexican dishes are still with us today and they are by far the bulk of what we know as "Mexican food," tacos, tomales, tortillas, tortilla chips, guacamole, mixiote, pibil, chili relleno, barbacoa, huitlacoche, chilaquilies, dozens of moles, adobos, tlyuda, pizatl en chitextli, pozole, enchiladas, mojo de ajo, tlacoyos, gorditas, molletes, nopalitos, pambasos, xolostle, molcajete, tinga, thousands of others along with about 10,000 different types of chili sauces alone.

For this reason, REAL Mexican cuisine, (outside of Taco Bell, Tex-Mex, "bastardized" or "Americanized" crap "Mexican food" etc.) is considered by world class epicurian experts to be in the top five national cusines in the world right up there with the French, Chinese and Indian......

well, there was a whole culture (actually more than one) in Mexico before the Spaniards came...so that influneces the cuisine. The Iberians brought pigs to the New World and lemon and mint together, but much of the other stuff eaten in any of the Latina Ameican nations revolves around the native inhabitants and the Spaniards and the immigrants who came next.
so some dishes are almost the same as Spanish food but mostly not.

BOTH are very unique and very good! Tortillas are a staple here in South Texas. Tortillas are native to this part of the country. They were popular amongst the indigenous of the area.

Mexican food derives from Spanish food. However, Spanish food retained more of the Moorish influence from its previous invasions. Mexican food evolved as it was influenced by the local native foods, as well as the ingredients that were available.

Spanish food relies more on items available in Europe and Asia - such as olives, rice, saffron, and various seafoods. Mexican food tends to be heavier with a strong reliance on corn and chiles.

There are some variations. Tortillas as a form of bread are purely Mexican. In Spain, a tortilla refers to an omelette.
