Vegetarian Times has a section of recipes that take 30 minutes or less. Or you can search on line by ingredient and diet type (vegan, etc). They are consistently healthy and most are quite easy to make.

If I'm desperately hungry and I don't want to wait too long I get some penne pasta, a jar of dolmio sauce and some soya or quinoa mince, and throw it together. You could try that or vary it slightly and you could also add a tin of kidney beans or other kind if you have them. Otherwise beans on wholemeal toast is quick and easy but healthy.
