It seems you have decided what cocktails to serve that would help to know what kind of ideas to give you........... Mexican Snacks : You can serve beer , Tequila, wine the beer glasses can be frosted (snowman glass) Food small taco,Toasted,queasily( all made some way as always but you cut the tortillas smaller) you can buy mini tamales..... Your platters add a something Christmas Wine and Hard Liqueur Cheese and Brie's .....crackers, small french breads, grapes, stuff olives, meat, stuff mushrooms, with this you can get cocktails bread most stores sell them (holiday season) Or just cut down your own bread . meats from the Deli..... You can even have the store make it up for you.... Another Way to entertain during the Holidays is to invite people over for deserts and then everyone knows no dinner will be served Coffee ( brandy or liqueurs) Teas,Egg Nog Pies Cakes, Christmas Cookies Aways have water and jucies and sodas Happy Holidays

Meatballs-but make them sausage balls. You can by some italian sausages and remove the meat from the casing and roll them into balls. It covers the savory side of breakfast-and is super easy, for all you need to do is bake them! Don't forget the toothpicks!
Smoked Salmon Spread-in cucumber cups. Use an English cucumber.Night before- Peel and slice in 1 inch rounds. and remove the center-but leave a this layer at the base. layer them on paper towels, so most of the moisture seaps out. Morning of-Put smoked salmon in the cups with a knife and level-or if you want to make it really fun-you can fold in some whipped cream (real whipped cream not sweetend, add to a plastic pastry bag or a large zip lock bag. Cut a small corner off and squeeze through whole into cups. If you use a circular motion, you can actually make them into little pyramids. There are several variations of smoked salmon spreads you can buy-and if you do make sure it is soft enough for you to work with., but go to the foodnetwork.com. They have a really light and refreshing one. Try garnishing with some chives and maybe some red tobiko-alternating of course for those who don't like tobiko.
1 English cumber usually yields about 12-16 pieces.
Phyllo Cups -stuffed with caramalized red onions and cheese-just need to caramalize the red onions, buy the phyllo cups and a cheese you like.Me personally- I caramalize the 3 red onions, add some thinly sliced and chopped mushrooms (about 1.5 cups) and fresh thyme-deglaze with a red wine. Once they have caramalized. I let them cool on a paper towel, and then add goat cheese (1/2 cup to 3/4 cup), 2 eggs slightly beaten and mix with hand-season with salt and pepper to taste-bake in oven for about 15 minutes-these are nice at room temperature too.
Good luck!! I commend you for actually making something! As I no longer enjoy potlucks because so few people actually make things anymore! Everything is store bought or premade from costco or the local chines market!
So yay for you also-you could try a spinach tortilla wrap with creme cheese and a salsa-cut into rings-that is super duper easy-but I don't think it scores too high on the originality scale.

Chocolate Chip Cheese Ball
1- 8 oz. cream cheese, softened
1 stick butter, softened
1/2 cup chopped pecans, finely chopped
2 Tbsp. light brown sugar
3/4 cup powdered sugar
1 tsp. vanilla
3/4 cup mini semisweet chocolate chips
Combine all ingredients (except choc. chips) in a bowl, much like you would a cookie dough. Refrigerate for at least half an hour. Take out mixture, form into a ball, then roll it in the choc. chips. Refrigerate again until ready to serve. Serve with graham crackers, vanilla wafers, or shortbread cookies.

Sugar Pie's Artichoke Tapenade
(my own creation; it's fabulous!)
1 (14 oz) can quartered artichoke hearts, drained
1 (8 oz) jar marinated artichoke hearts, drained
2 Tbsp. fresh parsley, rough-chopped
2 Tbsp. EVOO
1 Tbsp. canola oil, or mild salad oil
1/3 cup. freshly grated Parmesan cheese
1 Tbsp. lemon juice
1/4 tsp. granulated garlic
1/2 tsp. kosher salt, to taste
few grinds black pepper, to taste
Sort through artichoke quarters, removing any tough outer leaves. Place all ingredients in food processor, and pluse until a coarse paste is formed. Adjust salt and pepper as desired. Yield: 1½ cups.
Serving Suggestion: Place thin slices of baguette or sourdough bread on baking sheet, and drizzle with EVOO. Toast in 375ºF oven 4-5 minutes. Remove, and spread with artichoke tapenade. Sprinkle with freshly grated parmesan cheese, and return to oven for another 5 minutes. Top w/ FGBP and serve. Good hot or at room temp.
Also good tossed w/ hot pasta, fresh diced roma tomatoes, and grilled chicken breast.

Beer Cheese and some good bread. I like to use Cracker Barrel extra sharp cheddar, a little fresh garlic, Budweiser (Guinness may impress a few more people).
Cut the cheese into 1/2 inch cubes, toss in some garlic, add enough beer to mash it into a spreadable state. Salt to taste if you like.
It will cover the savories.

SNOWBALL CRUELLERS
------------------
3/4 c. sugar
1 c. milk
1 egg
2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
Mix all together and drop from a teaspoon into hot grease.
Fry until golden brown. Drain on paper towels. Shake in bag
with confectioners' sugar.
