Someone told me that even when chocolate gets all the white stuff on it and tastes stale, it can be melted and re-set, and then it's as good as new! Is this true? If it is, it means chocolate is......invincible!

You can melt and re-set, but the oil and fat in the chocolate is probably stale and oxidized at this point. It probably won't make you sick, but it'll probably taste funny.

This is basically true. The white stuff is oils that have separated from the chocolate. Depending on the quality of the chocolate, it is probably wax, though better chocolate it is just excess cocoa butter. Anyway, melting the chocolate remixes the oils back into the rest. Just be careful to do this on a double boiler, and heat it slowly so you don't scorch it. If you do, it will get lumpy and taste burnt.

no. in fact it turns white and chalky when it gets old. it also depends on the type of chocolate. Milk chocolate isn't rich in cocoa so it turns earlier than say dark chocolate with a higher cocoa percentage.

I'm sorry, but I've never witnessed such happenings. Of course, chocolate never lasts long enough in my presence for me to see any white stuff appear; so that may be why. ;)

chocolate will eventually go bad :(
honey lasts forever. they have even found honey in the pyramids that's edible.
