Peru is a country with many varied and distinct regions. Each has certain food specialties. The majority of the population is in and around Lima, the capital city on the Pacific coast. Strong ocean currents bring in an abundance of seafood. The well-known national dish of Peru is ceviche and comes from Lima. Ceviche can be made with many types of fresh fish (usually a mixture) that is "cooked" by the acidic reaction with lime juice. It usually has onions and some hot chiles. Traditionally, it is served with some sweet potato and some corn on the cob. The Peruvian government recognizes over 5,000 types of potatoes.

Peruvians like rice and potatoes and often eat both together in the same meal. The Peruvians in the high Andes mountains eat meat and grains and vegetables. They do eat cuy (which we call guinea pigs) All I can say is it is an acquired taste.

In the north, Peru has the Amazon rain forest. A huge variety of fruits grow in this tropical climate. The people eat fish from the river and often have less "civilized" cooking facilities.

My personal favorite Peruvian dish is called papas rellenas, which literally means stuffed potatoes. It goes something like this; you cook some potatoes and mix them into something like a thick mashed potato. You make a filling out of wonderfully spiced cooked and shredded beef, some chopped boiled egg, some raisins, maybe some black olives. With your hands, form the potato around the filling, so that you end up with something about the size and shape of a small potato. Fry that in some oil and enjoy!

My boyfriend is half Peruvian, so I have a bit of experience with the non meat foods when I've been in Peru (I'm a vegetarian).

They eat a LOT of potatoes (it is where they originate), corn, tomatoes, avocado, bananas, lots of cheeses, rice, fish, as well as a dish called ceviche (could be described as a sort of seafood salad). There is also a traditional dish called 'cui or cuy' that consists of the wild guinea pig they have. They have a DELICIOUS fruit called lucuma that is the most delicious flavor of ice cream I've ever had.

I dont know but for some reason I imagine deserty type wilderness and open fires under copper pots cooking up termites and corn mush... and other stuff you'd eat on leaves.
I really dont know- I bet they have great ethnic foods including lots of fruit veg and fish and chicken and probably a good variety of spices of traditional sauces. If you come across any tasty sounding recipes, be sure to let us know. Good luck.

Last programme I saw on Peru they were quite merrily tucking into guniea pigs ............... yik !!!!!!!
