Sun Dried Tomato and Avocado Goooodness
Ingredients:
several fork fulls of sun dried tomatoes
1/4 to 1/2 avocado (depending on how hungry you are)
wheat bread
tofu (optional)
Directions:
Toast bread (perhaps wait until other ingredients are ready).
Place desired amount of sun dried tomatoes on a small plate and microwave for approx. 35-45 seconds. When done, drain oil and pat dry (optional) and place on bread.
Slice avocado and place on vegan bread (it sometimes helps to mash it into the vegan bread to prevent sliding while eating).
Slice extra firm tofu and place on top of tomatoes.
Enjoy!

I love making "egg" salad from tofu, but I put a fun twist to it. I usually buy a mix called "tofu mate" to cut alot of prep work so I can focus on the other ingredients. Once you have it mixed I like to add golden raisins, walnut chunks, curry powder, and green onions. Top the sandwich with thin cucumber slices and mung bean sprouts. If this doesn't impress him, I don't know what will?!

The best Mouse ever... Melt 1 pound of dark chocolate or semi-sweet depending on your taste. Melt it in your microwave with a little bit of Margarine on low be careful not to burn it. Whisk Silken tofu in a food processor until you have a smooth result. Pour the melted chocolate after tempering a bit of the tofu in it and mix until all is well mixed.
you can pour into cups and put in the fridge until it sets.

Cold tofu with fried shallots.
First, cut up the tofu into cubes. And place in plate.
Heat up 2tbs olive oil in pan. Then add in the chopped shallots. Fry until brown. Pour the sizzling oil and shallots over the tofu. Then add light soy sauce.
When it cools down, put into your lunch box.
