This depends entirely on who you're feeding and what you're serving with it. When we go camping, I regularly cook for around fifty people. Most of them are men. Hungry, hungry men.

For potatoes, figure on 1/2 pound per person. Twenty pounds will feed about forty people, so you'll need forty pounds of potatoes. I buy in bulk at Sam's, of course! Figure on 1/4 pound per person for the carrots. The 1/4 pound rule goes for meat, too. Also, if you're serving other veggies, you may want to go lighter on the carrots. Especially for guys. Guys just want meat and potatoes a lot of the time. And bread. Lots of bread.

Speaking of bread, if you're feeding that many people you may want to run to Sam's. Go to the bakery section and pick up a case of frozen bread dough. You can buy croissants, large or small, french bread and hoagie rolls. These are the same breads they bake fresh at Sam's.

It's really, really cheap. I buy a case of the hoagie rolls (they're already preformed, just thaw and bake) bake them at home and make garlic bread or sandwiches out of them. A case of 42 twelve-inch rolls is less than $13.00. Just ask the people in the bakery department to let you look at the baking instructions. Make sure you have a friend who's willing to bake some at their house! And, whatever you do, DON'T defrost them all at once!

If this are the only sides... 40# potatoes 20# carrots

If there are others 30# potatoes, 15# carrots

In accordance to plan for large parties, I figure 6 ounces of meat 4 ounces of potato and 4 ounces of side veggie per person. This is a gracious plenty without over feeding the guest and allowing him/her to have a desert without feeling "stuffed"

So in answer to your question 4 ounces goes into 1 pound 4 times, so you will need 20 pounds. (I would add a couple extra pounds for good measure) and 20 pounds of carrots.

One potato per person and two carrots per person. If a 5 pound bag of potatoes has 20 potatoes in it, you'll need 4 bags. Carrots you will have to figure out yourself -- I don't eat them and rarely cook them....

well how much are you planning on feeding everyone. And what are you planning to do with the potatoes. Bake them or make smake or potatoes salad. If you are going to back them, well lets see. 10 lb bag of potatoes has like 20-30 in them. So all you'll need is around 5 bags.= 50 lbs just incase. nOT TO sure aboutthe carrots, and it alos depends on what brand. you know like russell or idahos... different sizes so. different amount per bag.

I would estimate about 1/2 pound per person (just to be safe) so overall you would need 40 pounds. since potatoes weigh more i would do maybe 30 pounds of potato's and 10 pounes of carrots.

We cook 5lbs of redskin potatoes at holidays for 8-10 people. I would say 6lbs per 10 people would be sufficient. Carrots I would do less - maybe 4 lbs per 10.

If your working on the basis that the carrots and potatoes are going to cut into bite-size pieces and cooked.eg buttered carrots and potatoes.then its 1lb=4persons.For 80people you will need 20lbs of carrots,20lbs of potatoes
