Cabrito Guisado (Kid Goat Stew)
4 lbs. kid goat meat cubed
1 T vegetable oil
2 tsp. salt
4 tsp. mixed spices (peppercorns & cumin)
3 garlic cloves
1 8-oz can tomato sauce
2 T flour
1/2 c. water
Brown meat in oil; add salt. Grind spices and garlic and add a small amount of water. Add spices, tomato sauce and enough water to cover meat. Simmer 30-40 minutes. Blend flour and 1/2 cup water. stir into meat to make gravy. A traditional blood pudding, Sangrita, also is prepared by following this recipe. Simply omit the tomato sauce and 1/2 cup water and substitute 1 cup kid goat blood. Mix with the flour and simmer 10 minutes. Seve with flour or corn tortillas. Serves 8-10
Goat Meat Curry
3 lb. goat meat
2 cardamon
2-3 cloves
2-3 cinnamon sticks
3-4 bay leaves
1 teaspoon whole black pepper
1/4 cup oil
4 chopped onions
2 chopped tomatoes
2 tablespoon tomato puree
1 tablespoon garlic paste
1 tablespoon ginger paste
2 tablespoon chopped fresh coriander leaves
1 tablespoon red chili powder
1 tablespoon coriander powder
1 teaspoon turmeric powder
1 tablespoon garam masala
salt to taste
water for gravy(curry)
Heat oil in frying pan, add cardamon, cloves, cinnamonstick, bay leaves, whole black pepper and fry for few seconds. Then
add onions and fry until light brown, add ginger garlic paste, tomato, tomato puree, coriander powder, red chili, turmeric and
salt to taste. When masala is thoroughly fried and oil comes up add mutton pieces and fry until brown. Then add water cover
pan and keep it on low flame until mutton is done. Garnish with chopped coriander(cilantro) leaves and garam masala for a
delicious flavor. Serve with roti or nan(bread).
Jamaican Curried Goat
2 pounds stew meat with bones
1 tablespoon of lemon juice or 1 lemon
1 large onion chopped
1 bunch scallions (optional)
2 fresh garlic cloves, crushed
1 tablespoon fresh thyme or 2
tablespoons dried
2 tablespoons curry powder
1 teaspoon white pepper
1/2 teaspoon salt
1 hot pepper, chopped and seeds
removed (preferably a scotch bonnet or
habanero)
2 tablespoons cooking oil
1 cup Irish Potatoes, cubed (optional)
1 cup cho-cho (chayote squash), cubed
(optional)
2 cups of water
Choose a caribbean curry mix if possible for this dish. Trim any fat off the meat and then cut the meat into small pieces. Traditionally the bones are left in the curry to contribute flavor and nutrition. Rub the meat in lemon juice and then combine with the onion, garlic and spices. Leave covered in the refrigerator overnight (or at least a couple of hours).
Heat oil in a skillet or dutch oven over medium heat and brown the meat mixture. Add the water and simmer for 1
hour. Correct seasonings as needed and continue cooking for about another half hour until tender. Add more water as needed. Potatoes and/or cho-cho can be added in the last hour if you wish. Serve over white rice preferably cooked in coconut milk!

The North Inidan goat curry recipe looks good, but this is one West Indian stlye like the one you had at the Jamaican place!
1 large onion - diced
4 cloves of garlic - finely minced
1 tablespoon of dried thyme or 3 sprigs of fresh thyme
4 scallion blades
4 celery leaves (from the middle of the bunch)
3 lbs of goat meat - fat trimmed
3 tablespoons of curry powder (look for the kind that says madras curry)
1/4 cup of oil
Bland the first 5 ingredients with a little bit of water to make a smooth paste. Season the goat with salt and pepper and add the seasoning mixture. Mix well and let marinate in the fridge overnight or for an hour at room temperature. Heat the oil in a heavy pot, add the curry powder and stir frequently so that it doesn't burn. Add 3/4 cup of water. YOu should now have a thick curry paste. Fold in the goat and cover. Cook on low-medium heat stirring occasionally for 45 minutes. You want all of the liquid to cook out .. .after it evaporates, add 2-3 cups of hot water (depending on how much gravy you want). Adjust your salt and pepper to your taste.
The reason you let the water from the meat evaporate is becuase if you leave it in, your food will have that gamey, goat smell.
Also, it's important to cook the meat on low-med flame because cooking it on high heat will make the meat tough. It should take 45-60 minutes for it to cook properly.
Variations - You could add 2 potatoes cut into large cubes when the goat is half cooked . .This will make a thick, tasty gravy. Also you can add a jalapeno to the seasoning paste if you want it hot.

If you want the real thing, then you gotta get the real curry. It not that common over here but the right curry, lots of pepper, scotch bonnet peppers to be precise, bell peppers,potatoes, onions, fresh thyme, salt, and butter.
Fry the onions, thyme and pepper together on low flame then add the curry.
keep the flame low or the curry will burn. Add your butter then add the goat meat. Get the meat from the ram if possible and make sure its fresh.
Once its all mixed together add water and potatoes and leave to simmer. It can take a while to cook so give at least 40 mins to simmer then leave until you think its ready. Add salt to taste.

It is quite common. Try this hot North Indian recipe...
Fry 2 chopped onions in 50 ml oil till golden.
Add 1 can of chopped tomatoes, 1 tsp crushed garlic, 1 tsp crushed ginger, 2 whole green chillies, 1 pinch cumin, 1 black cardamom, 3 cloves ,1 inch cinnamon, 2 bay leaves and fry till all water is dried up and oil starts separating from the sauce.
Now add the mutton, salt, half tsp coriander powder, half tsp ground cumin,half tsp red chilli powder, pinch of turmeric powder,and give it a good stir.
Cover and simmer for 1 hour, turning occasionnally to prevent the spices from getting burnt at the bottom.
When all the water has dried up, add 1 tsp garam masala, a cup and a half of water, boil in a pressure cooker for 15 minutes or more until the meat is really tender.
Sprinkle with coriander and enjoy with basmati rice or bread of your choice!

4. Please meat in pot and let brown a little
5. Add 1 cup water and seasoning
6. Add Carrots (Optional)
7. Cook until tender
8. Add whole scotch bonnet pepper for flavor and simmer for minutes
9. Make gravy by adding a teaspoon corn starch
10. Serve with white rice

In a lot of Asian countries, Goat, Lamb and Sheep are interchangable in food. In fact the word is often confused in some languages (e.g. Bahasa Malaya).
So any mutton curry could be substituted for goat.

A good receipe to try :- The best tip is to season the meat with the curry powder, Onions, hot pepper overnight.
CURRY MUTTON/GOAT (JAMAICAN STYLE)
1 lb. shoulder of mutton, cut in sm. pieces
1 tsp. curry powder, or more if desired
1 tbsp. cooking oil
1 med. sliced onion
1 hot pepper, cut up, omit seeds
1 c. hot water
1/2 c. diced potato
Season meat with salt, pepper, onion, curry powder and allow to stand for about 1 hour. Heat fat in skillet. Add meat with seasoning. Cover and allow to cook in hot oil for about 20 minutes. Stir occasionally. Add water and potatoes, cover tightly, cook on low flame until meat is tender and gravy is thicken. Add more water if necessary, serve hot over cooked rice.

You can get goat at an Indian store or at a Middle Eastern store. You can probably find the spices there too. There should be quite a few around London...

Make it the same way you would make
a Beef curry.
Be aware that goat is a rather stronger meat than beef
and needs to be cooked longer.
35 mins per pound is recommended to me by a chef.
