i bought a jar of kimchi for the first time and would like to know how i should ferment it. i like it really fermented.

putting the jar in the fridge will delay the proces,keep it in a cool dark place,check frequently for readiness according to your taste,when satisfied with the result,it can go in the fridge,wrap the jar securely to prevent smell from permeating to other foods.

You can go to a Korea town and get a special kimchee fridge. This lets you control the temp and keeps your regular fridge from stinking up!

Or you could do it the old fashioned way and bury it (my grandma still does this!).

Well, in Korea, they bury it under ground for a few months. Sure gives it a kick.

put it in a plastic container and leave it in your fridge for a long time. (put the container in a ziploc bag so it doesn't make your fridge stink) but yeah put it in there for a while and voila!

leave it out of your fridge for a day - in a dark, dry place.
