This time of year a nice chicken or beef stew. You can put your ingredients in a crock pot early the morning that you go then when you get back it should be done. With the exception of maybe thicking it a little a the end to make a nice thick stew.Take all your favorite veggies and potatoes and celery and beef or chicken cubes i use both they add to the favor .I also put one can of tomatoes (small) for added favor.Peel your potatoes and cutup all your veggies and make sure you put 4cups of water in crock pot.You may need to add more later.Put your tomatoes and cerly and add all your spices to crock pot first.Brown your meat with ever you chose Chicken or beef then put it in crock pot .Once you have every thing you want to put in there put lid on and leave on medium until you return.IF you never done this before do a trail stew;make it before your big date and see if your going to like it or not.If you like it then 10 to 1 every one else will like it too.I always make tea-biscuits the day of so they are fresh and can be warm up in the nuker. The biscuit's go very well with the stew. Then last but not least apple pie makes a good dessert and it would hurt if you had ice cream on hand too.

Well... you didn't say what time the church service will be over, but I'll assume about 11 or 12 since you said "brunch" :)

I'd just do sandwich platters, veggie platters, cheese and crackers and a cookie platter or a cake made specially with a cross or something on it to represent the event depending on your religion.

If it were me? I'd make up egg salad, chicken salad and pimento cheese and put the sandwiches together the night before. Figure on two sandwiches per person and then divide that number by three (since you'll have three types of sandwich filling.) That's how many of each type you should make. Feel free to contact me offlist for recipes for each filling if you'd like :)

Make the veggies something simple and colorful that you can put out on a platter or foil-covered cookie sheet at the last minute, like baby carrots, celery sticks cut up the night before and baggied, grape tomatoes, broccoli cuts and prepared dip. Buy cheese cubes and boxed crackers.

Costco does a beautiful filled sheet cake for occasions like this if you have one near you and it serves at least 48 people (you'll just need to make sure you have a place to store it or have someone stop at the last minute because it has to stay refrigerated.) We generally get them the day before and keep them in our large freezer. Pull it out when your event begins and by the time you're ready to cut it, it's thawed!

For drinks just have coolers filled with ice or blue ice, assorted sodas and bottled water or make a simple punch.

Brunch isn't a real easy "make ahead" meal - so something along a traditional buffet might work out better.
Maybe a roaster with either sliced ham or turkey, buns, cheese and condiments, scalloped potatoes and baked beans in crock pots, and a variety of salads (depending on the number of guests) People make sandwiches if they want and there is plenty of additional food. Don't forget the cake!

I would serve a buffet. Make it simple and easy on yourself. Possibly something warm from a crock pot such as meatballs. You can also add a meat/cheese tray and some bread and rolls for sandwiches. Possibly a salad or two for selection like pasta and potato salad. Veggie tray with dip and a dessert.

Light and conversational. It is about your nephew not your cooking. Suggestions: Create a salad bar with several kinds of salads and a meat carving station with ham and turkey breast with a colorful dessert like an ice cream cake.

Sliced roast beef, ham & turkey can be set out with small rolls and dishes of mustard & mayonnaise so guests can make sandwiches, potato salad, macaroni salad, dish of olives (green & black), pickle spears, gherkins, fruit salad and a nice sheet cake, could be one way to go.
