Hi there! I am answering from Monterrey, Mexico, home of the carne asada.
Here is something you can try.
You will need:
A charcoal grill
Real mezquite charcoal (nos reconsituted)
Shredded beef
Pork lard
Refried beans
Inside skirt beef cut
The small onions with a long green tail
Limes (Small, green, with seeds)
A lot of beer
Light the charcoal, wait till flames go out and spread. Put the grill about 8" from the top of the charcoal.
With the tortillas, pork lard, shreeded beef and beans you are going to make "empalmes". Sandwich some beans and shredded beef inside two tortillas until the tortillas are 1/4" apart. Cover the outer side of the tortillas with pork lard like you would with butter. Thorw them on the grill and turn constantly until they become a bit crispy. Take out, salt, put salsa (real salsa, like La Sabroza or Costeña) on them and devour.

I reccomend fajitas- you can buy the fajita seasoning packets at the store.
Or quesadillas- these are really simple, just put cheese and cooked beef, chicken, or whatever you like in a folded tortilla and grill it in a skillet until the cheese is melted, then serve and eat with sour cream, salsa or whatever you want.
Or burritos and enchilads. You need to buy the extra big tortillas for both of these, but the enchiladas are smaller than the burritos. Then you fill them with seasoned ground beef, or grilled chicken, cheese, or beans, or rice-basically anything you want. And then you melt some mexican cheese on top of them. Some people like to grill them, others bake them, and others just pop in the microwave.

two very versatile mexican-american dishes are enchiladas and chili. Both can be made completely your own and allow for some creative freedom when you are making them. Check out http://www.allrecipes.com for some awesome versions of both recipes. It's fun to deviate from the norm, so try types with ingredients that are new for you. It makes things more exciting.

here in Texas its called Tex-Mex. the only place to get real Mexican food is at home, however there are many good Tex-Mex foods.
enchiladas, burritos, chalupas, sopapillas, flan, Mexican fried rice, frijoles, barbacoa, and on and on.
by the way, the reason Tex-Mex came into existence is to cool it down for us gringos. some of the chilies used will light you up.
