I am interested in learning how to make my own sushi, love california and kamikaze rolls the best.

Well the rice is the key thing here. Get proper sushi rice.
The authentic way to prepare rice is to wash it really well, under running water until it runs clear.
Put the rice in a pot and use enough water to just cover it. Now let it soak for 30 mins.
To cook, cover it tightly and cook for 10-15 mins. Then turn off the heat and let it steam for 10-15 mins more.
A mixture of 4tbsp rice wine vinegar, 2tbsp sugar and a tsp of salt is then stirred through the rice.
To make rolls you need toasted seaweed sheets and a rolling mat.
You lay a sheet on the mat and with wet hands, press a long oblong of rice onto the middle of the sheet, then a thin(!) layer of wasabi paste and your desired fillings, I suggest batons of vegetables like; carrots, cucumber, avocado, spring onions, then a sprinkling of toasted sesame seeds. Fish can be used too, try raw or seared tuna, salmon, roe, shrimp.
When you roll it up you want the rice to completely enclose the filling, so squidge it to cover, the roll the seaweed evenly into a long cigar, wrap in cling film and refrigerate.
Cut the rolls with a sharp knife. A dipping sauce of chilli, ginger, sesame oil and soy is delicious, but traditionally its soy with a blob of wasabi!

1. Sushi Rice = glutinous short grain rice

2. Use 1 cup rice to 1.5 cups water. I find the 1:2 ratio makes the rice too soggy. Some people say you should let the rice sit in the water before cooking. I haven't noticed a difference.

3. Vinegar solution: 1/2C rice vinegar, 2 Tablespoons sugar, 1 tsp salt. I don't like it too sweet. Just my personal preference. Add to just cooked hot rice and mix in vinegar a little at a time. Traditionally, it's mixed in a wide bowl and fanned so the rice gets glossy.

4. Taste the rice... salty enough... enough vinegar... etc.

Now you're ready to fill with any fresh ingredients. Dilute out the leftover vinegar so you can use it to dampen your hands. Damp hands will prevent the rice from sticking to your fingers.

5. Wrap the sushi bamboo mat with saran wrap. This will prevent rice from getting caught in between the bamboo skewers. you can also lay down a wide sheet of saran wrap so you can do step 6.

6. Wrap sushi and let sit a couple minute.

7. Cut with a sharp knife. Cut into thirds and thirds into thirds. I was told it's bad luck to cut into even numbers.

8. Drink plenty of sake and have fun. :-)

I just made some Cali Rolls last week. Miss e has great instructions. The only thing I add is that vinegar solution you mix into the rice should be simmered together before mixing. You can also buy already mixed sushi vinegar (check the label to see if sugar is already added). I use this solution to wet my hands instead of just water (to reduce rice sticking) also I dip the blade of my sharp knife into it frequently while cutting into the sushi. reckoning on what form of sushi, it quite is quite ordinary. Mine tasted basically fantastic. I did salmon and tuna nigiri and a pair distinctive flavors of California roll. perform a little analyzing on line or purchase a sushi e book. Be warned however, it quite is quite a drag making sushi for a million or 2 human beings. with the intention to have a variety of fish and rolls, you choose extra human beings to consume, as you cant purchase such small products of fish for an excellent form of sushi. in case you get California roll down, one in all my favorites is the thinly slice an avocado a million/2, fan it around the width and canopy a "rice outdoors" CA roll. very superb seen. first actual step is to comprehend the sticky rice. sturdy success.

I am a fanatic at making sushi and still don't get it right. Practice makes perfect and it helps I have a dog that LOVES my mistakes!! Good luck. It is so fun. I order tons of crap on the internet all the time - it gets me thru work :-)
