I have 10 people comming for dinner for christmas day. Parents want to get a traditional mexian christmas dinner, which is tamales, and mundeo. ( hope i spelled that right) I want to make something else, but dont know what to make? any advice???

We're doing a standing rib roast for Christmas dinner. Nothing against turkey, but we had a big one for Thanksgiving and had plenty of leftovers, so we're kind of "turkeyed out."

We always have standing rib roast and yorkshire puddings for Christmas since we just had turkey about a month before. For you, I would suggest a spiral cut ham. It's already cooked. You can either heat it up or bring rolls and various mustards for making little sandwhiches. It really goes well when you are having a buffet type of meal. And you don't have to do a lot of work b/c it's already sliced and glazed and delicious. Then you can focus on making some amazing side dishes. Have your family bring some of their favorite Mexican dishes too and make it more interesting. But really, anything is better than tripe soup, right?

Well, you probably had turkey for thanksgiving and there's beef (of a sort) in the menudo, so I'd probably opt for ham.

The best thing is, as long as you get a decent quality ham, they're by far the simplest of the "traditional" Christmas entrees to prepare -- basically heat and eat, since it's already cooked -- and a relatively inexpensive way to feed a large crowd.

Do a standoing crown roast of pork or beef. Order it a week or two ahead froma local butcher... ask them to "french" it so it will roast pretty. You may also do a whole prime rib (beef).

Personally, I would not want to sit down on Cmas Day to a bowl of cow stomach soup (menudo).

I'm a southern girl & we always have turkey & dressing and also a ham ( basted with brown sugar and pineapple) We also have the traditional sides of mashed potatoes & gravy, sweet potato casserole, broccoli casserole, green beans, peas, fried corn, squash casserole, homemade coleslaw, fruit salad, deviled eggs & of course cranberry sauce. Served with an assortment of rolls and traditional desserts such as pumpkin pie, pecan pie, cheesecake and of course assorted treats such as eggnog & sausage balls, raw veggies to munch during football & while waiting on dinner time......I can't wait!!

I would go with the Roast Beef - would be better with the tamales, etc.

Beef Dinner Roasted on the Grill

1 (1 1/2 to 2 pound) beef shoulder roast
2 teaspoons ground black pepper
2 teaspoons garlic powder
1 teaspoon corn starch
1/2 teaspoon salt
1/8 teaspoon ground thyme
1/8 teaspoon ground white pepper
1/8 teaspoon cayenne pepper
4 medium baking or sweet potatoes
1 tablespoon vegetable oil
4 ears corn-on-the-cob, unshucked
1 red bell pepper, seeded and quartered
1 green bell pepper, seeded and quartered
Combine black pepper, garlic powder, corn starch, salt, thyme, white pepper and cayenne pepper to make a rub. Press mixture into both sides of roast.
For conventional grills, build wood or charcoal fire to one side. Use enough fuel to sustain heat for 1 hour. For gas grills, preheat one side then turn to low.
Wash potatoes, pierce with a fork, and brush with oil.
Place roast, potatoes and corn on cool side of grill. Cover and cook 50 minutes to 1 hour, maintaining grill temperature of 300ºF.
Brush peppers with oil, add to hot side of grill and cook covered during last 10 minutes.
Check roast doneness with meat thermometer inserted in center. Remove when thermometer reads 140ºF for medium-rare or 155ºF for medium. Let stand 10 minutes before carving. Slice thinly across the grain.
To serve corn, peel back husks, remove silk and brush with melted butter.
Serves 4 to 6.

Tip: You can substitute chuck roast or arm roast for the shoulder roast.
