How do you make pakora sauce the way the Indian restaraunts in Glasgow do it?

I don't know about glasgow but in India its usually made out of mint, coriander and raw mango mixing it together with water.

Pakora sauce

quick and easy indian starter very good to take to buffets.

15 min 5 min prep

INGREDIENTS

2 teaspoons cumin powder
2 teaspoons coriander
1 teaspoon chili
1 teaspoon curry powder
2 teaspoons garlic
1 chopped onion
1 small chopped potato
8 ounces flour
salt
pepper
1 teaspoon ginger powder
1 tablespoon tomato ketchup
1 tablespoon chopped chives

DIRECTIONS

mix all together with enogh water to make a thick batter.
if you like it hot use more chilli or hot chilli sauce.
heat oil in a wok and place spoonfuls of the mixture until puffed up and crispy.
turn over if the oil is shallow.
this mixture can be played with to suit your tastes

Natural yoghurt,chopped mint ,chopped coriander,tom puree.chili powder or paste (optional) Lemon juice
Sometimes a little vinegar from some beetroot gives a nice pink colour
Do all this to taste..

Any ketchup but Heinz. Chilli powder, salt, brown sugar, mint and coriander leaves chopped finely mixed together.
