Good. At a reputable restaurant, the chef will give you the best, freshest fish available, and it will be cheaper than had you ordered it off the menu.

They serve their best for Omakase, but you have to note two things. One is as Bella said to pick up reputable restaurants. The other is to declare them if you have any dislikes (such as "no raw fish", "no ginger", "no wasabi" etc) so that they avoid whatever you cannot eat. Enjoy!
