I want to make a recipe that calls for "Curry Paste". I've never heard of it. I'm headed to the international grocery store in search of it. Any idea what "country" I should start looking in etc.? Thanks!

There are lots of types of curry - Indian, Thai, Japanese - and they taste quite different. The Indian curries include Garam Marsala, Vindaloo, Tikka Masala. Japanese curry comes in a brick (small rectangular box) and is more like gravy. Thai curry can be yellow, green or red (if your recipe also calls for coconut milk, it's probably Thai). Watch out, the Thai stuff can be really hot!

I don't know anything about your recipe like where it is from etc. I cook a LOT of Indian food. The very best curry paste I have ever used is the Indian-UK brand called "Patak's." It is excellent alone or used as a base for other recipes. (Be careful to buy the jar of "paste" NOT "sauce"!)

I know it is available in UK, Canada and many parts of the U.S. in the "international" food sections. (Not available where I live in Mexico City unfortunately......)

If no Patak's simply ask the clerk for a recommendation.....

There are many different types of curry, from many different countries. I am guessing that you are looking for a Thai curry paste. These are plentiful at Asian grocers, but, if you are going to a regular chain grocery store, I would reccommend looking in the "Asian" section for a brand called "Thai Kitchen." Most stores carry it.

Curry paste

2 teaspoons coriander seeds
2 teaspoons cumin seeds
2 teaspoons mustard seeds
2 teaspoons ground cloves
1 teaspoon turmeric
2-inch piece ginger, peeled and chopped
1/3 cup white vinegar

In a spice or coffee mill grind spices and ginger until very-finely minced. Turn out into a bowl and stir in vinegar to make a smooth paste.

To make curry oil, mix half of paste with 1 cup vegetable oil.
