YUMMMMM BRIE!!! You can eat the crust too it is milk....you should put it in the oven for a few seconds melt it and eat it with french or any bread...YOu are making me hungry!

You can eat the crust too, but it has no specific taste. The taste of the crust is very mild, and sometimes it has no taste at all.
Be careful and read the label if you are buying very cheap "Brie", as sometimes it's not real- it's Brie-flavored spread that they cover it in plastic that's made to look like a crust, so you do not want to eat the plastic. If it's actual Brie, then you can eat both, but it's not impolite or weird to just eat the soft inner part. It's a matter of preference

People usually don't know that most of cheeses are meant to be eated in their whole!
The crust has much more taste! :) I'd say to avoid eating only the rubber crusts of cheeses... in italy we eat almost all the crusts even those that seems dirty.. just scratch them a bit and eat them with bread !
Brie is great with pears in case you wanna try! :)
Oh! You would also try to eat cheese with some honey :)

The outside is supposed to be eaten too; it is a kind of edible mould (i.e. funghi, the same kingdom as mushrooms) from the Penicillium genus (they actually spray the cheese with this mould as part of the cheesemaking process). There is absolutely nothing wrong with it, just like there is nothing wrong with blue cheese (which has another type of mould in it), or yoghurt (which has bacterial cultures in it). People are often put off by the idea of eating mould, but it's just another kind of fungus, like mushrooms or yeast, which you probably wouldn't think twice about eating.
Of course, some types of mould are poisonous, but they are not deliberately used to cover cheese! Some cheeses have a more obviously "mouldy" rind, and that is not generally eaten as it is more likely to contain moulds that are not suitable for human consumption or just don't taste very nice! Although some people say you can eat the rind of any cheese apart from any with a bright yellow mould... I wouldn't!
It has been said by some that the rind is the best part of brie & camembert. Personally I like the inside & outside equally, but I think they compliment each other perfectly in terms of both taste & texture, making the overall experience of the cheese better when both are eaten, rather than eating either part by itself.

I only eat the inside, but some people eat the crust. Give the crust a try. It won't kill you.

The crust is actually mold and the natural hardening of the cheese as it is aging. I would not eat it.
