You make AMERICAN CORNBREAD. We use buttermilk instead of curd, but its close enough to the same thing. This traditional Southern recipe is the simplest. If you like you can add a little sugar- in the south, they don't add much if any, maybe a Tablespoon to 1/8 cup. In the north, they add up to 1/3-1/2 cup for a sweet bread, and oil or melted butter,or you could use ghee- about 1/3 cup. The proportions are approximately this:
to 3 teacups of maize (corn) flour,
add
1 tsp bicarbonate of soda
1 tsp baking powder.

I think if you don't have these, ENO would do- try 2-3 tsp.

one tsp salt,
2 beaten eggs
2 cups curd, or enough to make a pourable batter.

Pour into an oiled 9" round heated pan that can go in the oven. Bake at 400 degrees F. for 20-25 minutes, or until the top is brown and the center is firm when pressed with your finger. Cut into wedges, and serve with butter, ghee, or crumble in a bowl and serve with more cold curd on top. This would be great fro breakfast. Any pan of about that size will do- use a square baking pan if thats what you have. This recipe is not fussy. Just check on it for time. Some people like honey on it with their butter; my mother-in-law loves it with maple syrup. A sweet chutney would be good, too.

hi, U can prepare maize rotti out of it.
3 cups: Maize flour
1 cup Curd
1 no: Chopped onion
3-4 no: Chopped green chillies
½ cup: Grated fresh coconut
2 tbs: Chopped coriander leaves
1tsp: Cumin seeds
A pinch Asafoetida (hing)
Oil for roasting
Salt to taste
Mix all the above ingrediants and knead well to make soft dough. If required add water to it. Spread some oil on the hand and take a lemon sized ball of the dough and pat it to thick rotti.
Heat a pan and lace the prepared rotti on it.
Make 3-4 holes in the rottis and pour few drops of oil in each hole. Cook well on both sides till golden brown. Repeat the same with the remaining dough.
Ragi Rotti & Akki Rotti can be made with the same procedure by replacing Maize flour with ragi flour or Rice Flour
Grated vegetables like carrots and cabbage can also be add while making the dough.

Well i dont think you can rectify your mistake however if the quantity is little you can add more makki flour and some fresh Makki, add some spices like peppers and you can eat makki-gota or you can add flour in major proportion and make roti out of it... that is if you are interested in eating indian variety from makki or else you can make bread as mentioned by other people.

you could make some crisp dosas, by adding rice flour, rawa, some besan, chopped coriander, green chillies, salt, and break one egg in it ! stir well, put oil in a non-stick pan, spread 2 table spoons of the mixture, and turn both sides when done ! there go your dosas with a different flavour !
serve with tomato sauce, and mint chutney.
soak rawa for some time, in a little water, before mixing.
next time, see the color of the flour before mixing !
