The only difference is that the bleached flour is bleached to white - every bit of naturalness is sucked right out of it. Processed flour isn't that good for you anyway, so I always buy unbleached - makes me feel a little better. Unless you are wanting to make a cake or something that is white white - like omitting the egg yolks and using clear vanilla to make it pure - I haven't noticed any type of color change from using the unbleached flour even in white cakes.

The difference is only in the color. Unbleached flour has a bit of a yellow tint, so if you're making a food that's white then go for the bleached. However, a lot of flour is bleached using chlorine, which is FDA approved, but still kind of gross to think about. I try not to mix the two though, becaue they may have different chemical reactions when cooking.

Just what it sounds like. Bleached flour has been chemically whitened to remove any trace of wheat-likeness, so it's the color of the inside of a loaf of wonderbread. Sick. Unbleached, un-enriched (no vitamins artificially added) flour is the best kind for you, because it's been treated the least.
