I have been a vegetarian since I was 12. My doctor tells me still to this day that I am one of the healthiest people he knows. I have over the years done lots of research on what to eat and what to stay away from. Did you know you can get the same amount of protein in a 12 oz steak as is in 5 Almonds? I love beet greens too. They are an excellent source of protein. You can find books with great recipes and tips in a local bookstore. Here are some websites to check out.

Remember, just because you don't eat meat doesn't give you free reign to feast on junk. I know a lot of junk food vegetarians who eat a little tofu, a carrot every now and then, and lots of potatoe chips, fries, etc. A proper veggie diet is actually very heatlhy (in my opinion) but simply eliminating meat to eat a bunch of junk is not healthy. So, be a vegetarian who actually eats veggies (and fruits)

Just get your protein. Eat beans, lots of veggies, eat tofu. There are also a lot of pastas on the market that have a ton of protein in them. I eat a lot of nutrition bars on days when I do not think I have eaten enough protein. Just try to eat a balanced diet and you will be fine. Nuts are also a great source of protein and soy as well.

I take those vitamins (Centrium or whatever it's called) because that gives you what you need for the day. I'd also suggest fibre, mainly due to how it fills you up quickly. But generally just mix it up so you're not eatting the same thing over and over again. Then you'll get the variety of nutrients you'll need

Congrats! I'm not a vegetarian, but I know some people who are. One pratically starves herself! Please don't starve yourself!
