Make ahead casseroles are great because you can prepare them the day or night before, huge time savor.

My typical brunch menu is 1) a ham, get one already glazed like at honey Baked Ham, and then you just have to warm it up, 2) either mini frittatas, quiche, or an egg casserole, 3) an assortment of muffins, or coffee cake, or a baked french toast casserole, 4) fresh fruit tray with a marshmallow dip, and 5) a green salad or a spinach salad and 6) marinated tomatoes or other vegetable dishes.

Here is a Quiche that I throw together, that works very nicely for a brunch.

1 Pillsbury Pie Crust
1 cup of cooked crumbled sausage, or cooked crumbled bacon or the same amount of diced ham.
1/2 diced onion
1/2 box of chopped frozen broccoli
4 eggs
1 and 1/2 cups of half and half.
2 cups of shredded Cheddar.
salt and pepper
1/4 cup of honey mustard sauce. (this is not necessary but I had it left from McDonald's and
and tasted great.

Pour this mixture into the crust and bake at about 375 degrees for 45 minutes to an hour.
Slip a knife blade into it to confirm it is set.

Serve a fruit compote and Biscuits or croissants, along with beverages

Assuming nobody is vegan, eggs or omelets, bacon, toast, waffles(with butter and maple syrup), fresh fruit, orange juice, and coffee. If that sounds like too much, eliminate some of them, or prepare the waffles ahead of time (they freeze very well). Or you can serve fresh fruit, toast, butter and different kinds of jam as well as cheeses, OJ and coffee. It also depends on how many people you are entertaining. Let me know if you need more ideas.

2. Quiche Lorrain (There are several kinds you can search for) with a vegetable or hash siding.

Quiche, or an egg dish baked in the oven..many recipes available..bacon, sausages, toast, bagels, cream cheese, fresh fruit, oj, salsa, and cinamon (or equivalent) buns, coffee, tea, and maybe Kahlua or Baileys...keep it simple (refine for vegetarians), and everyone will be full

Brunch is late around 11am, So you should serve boiled eggs, ham bits, bacon bits, veggie tray, potato cakes, and a serving of a thin cookie with almonds and nuts in dishes around the table, Keep it simple and the center piece is the important thing, and how it is presented, and in what type dishes and trays.,cloth napkins PLEASE

flap jacks like pumpkin pancakes
blueberry pancakes
chocolate chip pancakes
french toast using texas toast butter to fry them on the pan and make them thick and crusty and tasty add vanilla and cinnamon to egg mixture with milk mix well then dip them in
blueberry muffins
danishes donuts
spinach fritata

Fresh fruit, especially pineapple and melons, can satisfy breakfast and lunch eaters. Try tator tots too. Kind of inbetween hash browns and french fries.
