Hello...I was once vegan so I have a bit of an idea; it's been year's though. Go to ur supermarket & look for the vegetarian foods made by a company called, "St. Yve's." I think it's that anyway. We have that brand in Canada but don't know if the states have it. They make pre-packaged vegie food, like hot dogs, cold cuts, vegie ground beef (which is really good), etc. Other than that, experiment with things. It's really important that u research some things on computer too. It will give u plenty of option's & will make u aware of natural seasoning & food option's that u can buy at a health food store. People think that vegitarian's have little option's but that's not the case. U just have to knowlege yourself on what is available. Maybe u can even look into a health food store to c if they offer any classes on being a vegitarian. But, be sure u incorporate a lot of protein substitutes in ur diet to replace the meat. I've been vegetarian for 17 years. I make bean quesadillas that my meat eating husband loves. I saute onions and garlic with bell peppers with salt, pepper, cumin and cayenne pepper. Add a can of black beans. Saute for a few minutes, then blend like half of it in a food processor. Mix the processed beans with the rest of beans. Spread on a tortilla, top with cheese. Bake in oven at 350 for about 10 minutes. Top with salsa or hot sauce.

I tend to make all the usual dishes - spaghetti bolognaise, lasgne, chilli, curry etc..but substitue the meat for quinoa mince or soya mince. I don't think there's any meal you can't make as there's a substitute or anything. I make shepherds pie using lentils, and when I make chilli I add kidney or cannellini beans as well as the quinoa mince, to ensure I'm getting a nutrionally balanced meal.

i like morning star brand and sometimes boca brand (they have yummy chick'n patties) mmmmm, i love portabella mushrooms!!!
