Stuffed Avocado Salad

Ingredients

2 avocado pears
1 tomato
1 head lettuce
Pepper and salt to taste
4 oz. peas or cooked beans
2 oz. grated cheese
Salad cream
2 hard boiled eggs
1 medium cucumber
2 tablespoons sour or sweet pickle
2 tablespoons lime juice
2 tablespoons chopped nuts

Wash lettuce and put in covered bowl in refrigerator to chill, strain peas from stock. Wash and slice cucumber and add salt to taste. Cut avocado pears lengthwise and peel off skin. Place avocados in bowl and sprinkle with lime juice.
Cover. Mix together pickle, cheese, peas and season for stuffing. Fill hollows of avocados. Place 2 wedges of tomatoes in each half. Arrange on a bed of lettuce. Lay cucumber slices of hard boiled eggs on dish around avocados. Dot with salad cream and sprinkle with chopped nuts.



Cassava Bread

Flat, white, round biscuit-like bread made by Amerindians in Guyana. Ingredients Bitter cassava
Salt to taste
Preparation
Peel, wash and grate the cassava. Squeeze out as much of the juice as possible, using either a matapee or by wringing in a towel. The juice can be used for making cassareep.

Leave in lumps and allow to dry slightly in open air.

Pound, sift and add salt.

Heat a griddle and a metal hoop of the size of cake required.

Put enough of the cassava meal to a depth of about 1/8 - ¼ inch in the hoop.

Cook until set, using moderate heat. Remove the hoop,

level the surface and press firmly. Turn onto the other side and cook.

When cooked through, remove the cake and sun-dry until crisp.

Note: Cassava bread may be lightly toasted and butter spread on one side for a delicious snack.



Sauteed Chicken Breast

Ingredients:

7 kgs. Chicken Breast
1 kg. Papaya 2 bots.
2 lbs. Butter
1 gal. Oil
2 kgs. Onion
2 kgs. Tomato
1 pkg. Brown Sugar
1 pkg. Salt
1 pkg. Black Pepper
1 doz. Scotch Bonnet Pepper
1 lb. Garlic
1 lb. Thyme.
METHOD
Cut each chicken breast into three pieces and flatten slightly, season with salt and pepper.

Place 1 Tbsp. of butter into a non-stick frying pan, place over med./high flame, and add chopped garlic.

Add chicken breast and allow to saute. Add chopped onions, tomatoes, diced papaya and saute for five minutes.

Add scotch bonnet and thyme. Add brown sugar and bring to simmer for five minutes. Ready to serve.



Sweet Potato Pudding

Ingredients

4 cups of sweet potatoes
1 tablespoon lime juice
3/4 cup sugar
2 eggs
2 tablespoons butter
1/2 cup coconut milk
1/4 cup of rum
grated rind of lime
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon powdered cinnamon
1 tablespoon raisins

To mashed potatoes, add sugar gradually and whole eggs, one at at time, mixing well after each addition. Mix in butter with a fork. Add milk. Blend well. mix in grated rind of oime juice.
Add rum. Mix well. Add salt, baking powder and cinnamon, sifted together. Mix. Add raisings.

Mix well. Pour this mixture into a greased pan and bake in a moderate oven (350 degrees) about 50 minutes, until done. Makes 8 servings.
