It depends on where you get the pho, if you make you own, it should be fairly healthy. This is because the soup base is usually cooked for 45 minutes.

Those served at restaurants tend to be cooked for a long long time with the same soup base. When they run low they just keep on adding ingredients to the same pot. Do you think that's healthy? You be the judge.

Yes, especially it is not oily at all. I like to add fresh lime juice, chopped chili, mints leave and sweet basil to spice up my beef pho.
