What is the best way to make fajitas. Simple yet precise recipes are the best please. Any tips on cooking are welcome seeing as how I tend to burn things.

Marinated Grilled Beef Fajitas

With proper marination and quick cooking, these fajitas come out tender and delicious. Prep time incudes minimum marinading time.

4 servings 2 hours 1½ hours prep

1 cup beer
6 tablespoons lime juice
1 tablespoon ground cumin
1 tablespoon chili powder
2 tablespoons chopped fresh cilantro
1 lb flank steaks
2 teaspoons vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
8 flour tortillas
salsa
sour cream
guacamole


Combine beer, lime juice, cumin, chili powder, and cilantro.
Add steak to the marinade, turning to coat.
Cover and chill for at least 1 hour.
Heat oil in a medium skillet.
Add bell peppers and onion.
Cook, stirring occasionaly until tender.
Preheat grill.
Remove steak from marinade and grill until med-rare to medium.
Let rest for 5 to 10 minutes.
Cut steak into thin strips across the grain.
Serve with tortillas, onions and peppers, salsa, sour cream and guacamole.

If you want to make it easy on yourself, buy the prepackaged fajita seasoning mix. Use a good quality steak (Rib-eye seems to work well, it turns out nice and tender). Pop the steak in the freezer for about 15 minutes before you slice it, it makes it a lot easier. Slice the meat against the grain into thin strips.

Slice an onion and a green pepper into thin strips. Heat vegetable oil over medium high heat to sear the steak. It only takes a few minutes, be sure to not overcook it.

Take the steak out of the pan, add a little more oil, then cook the onions and green pepper to the consistency that you like. Mix the fajita seasoning with water, add to the pan of veggies, add the meat back in and then let it cook for 5 minutes or so.

Sometimes you might need to add a little more water to the pan because the mix doesn't seem like it's quite the right consistency. Just be careful to not add too much water, just add a tablespoon at a time. You can also squeeze some lemon juice in, that tastes really good.

What I always do is follow the seasoning pakage instruction and I add a little bit of lemon or lime juice to them .The key is that you have to watch the whole thing when cooking , do not turn away from it at all.

follow the recipe on the seasoning packet but cook your meat in beer, trust me it's good, and i always add alot of cheese in with my meat and vegetables. don't use as much water as what the package will tell you. a little more than half will be just fine

Green and red peppers along with onion sauteed in butter and then use either shredded pork or chicken and then top it with whatever else you desire. Use only flour tortillas.
