but couldn't find anything. Just wondering...I've always been curious about why...it's so annoying. It's like my cough has an alarm clock and at about 8pm, it wakes up.

Often times, a change in position will move mucus and secretions that were stationary beforehand and will aggrivate the surrounding tissue, causing you to cough. I don't know what you're doing at 8, but if you start slowing down for the night, and possibly laying down, this could trigger it.

Maybe because your time in sleeping is usually around 8. Your body starts relaxing and your respiratory tract also relaxes, this causes bronchoconstriction and loosening of the mucus secretions. This triggers the coughing reflex, making you well, cough a lot. I suggest that you drink lots of water, it helps in loosening the secretions beforehand so it flushes earlier from your respiratory tract. If it still persists, please visit your doctor.
